  • 5 Potatoes
  • 1/2 tsp Salt
  • 2-3 Hard-boiled Eggs

Mentaiko Mayonnaise Dressing

  • 1.5 Tbsp Mentaiko (pollock roe), deseeded
  • 2 Tbsp Mayonnaise
  • 1 tsp Agave Syrup (or honey, sugar)
  • Pinch of toasted sesame seeds
  • Pinch of black pepper
  • Pinch of dried parsley flakes (or chopped chives)

Cooking Instructions

First, thoroughly wash the potatoes and cut them into bite-sized pieces. Place the cut potatoes in a pot, add enough water to cover them, and add 1/2 teaspoon of salt. Once the water boils, add the potatoes and cook for about 15-20 minutes, or until they are tender enough to be pierced easily with a fork. Drain the water completely, ensuring no excess liquid remains. (A little moisture is okay.)

Now, let’s make the delicious Mentaiko Mayonnaise Dressing! In a small bowl, add 1.5 tablespoons of deseeded mentaiko (just the roe) and mash it well. Add 2 tablespoons of mayonnaise and 1 teaspoon of agave syrup to the bowl and mix until smooth. The saltiness of mentaiko can vary by brand, so adjust the amount of mayonnaise accordingly. If it tastes too salty, add a little more mayonnaise. Finally, add a pinch of toasted sesame seeds and black pepper for extra flavor.

Once the potatoes are cooked and slightly cooled, transfer them to a large bowl along with the prepared Mentaiko Mayonnaise Dressing. Use a spatula or spoon to gently mix everything together, being careful not to mash the potatoes too much, ensuring the dressing coats them evenly.

For an enhanced aroma and appearance, freshly grind some black pepper over the salad or sprinkle a generous amount of dried parsley flakes. Alternatively, finely chopped chives can be added for a fresh, herbaceous note.
