Main Ingredients- 3 pieces low-sodium mentaiko (cod roe)
- 1 fresh cucumber

First, prepare the star of the dish: the low-sodium mentaiko. You can gently scrape out the roe from the membrane with the back of a knife, or grill it whole. (Choose your preference!)

Wash the cucumber thoroughly. Scrubbing it gently with coarse salt can help clean it further. Rinse under running water, then slice it into round, bite-sized pieces, about 0.5cm thick.

Heat a pan over medium-low heat and add a very small amount of cooking oil. Place the prepared mentaiko in the pan. Cook slowly, turning it occasionally to ensure all sides are evenly browned, being careful not to burn it.

Once the surface of the mentaiko has turned golden brown and is cooked through, add 1 Tbsp of butter to the pan. As the butter melts, gently swirl the mentaiko to coat it with the rich, buttery flavor. Be mindful of the heat to prevent the butter from burning.
