Cooking Instructions
Step 1
Start by preparing the ribs. Carefully cut between each rib bone with a knife to separate the spareribs individually. This ensures the sauce penetrates evenly for maximum flavor.
Step 2
Soaking is key to removing blood. Place the separated ribs in a bowl of cold water and soak for about 1 hour, changing the water twice during this time. This step is crucial for a cleaner taste.
Step 3
First boil to remove odor. Cover the blood-rinsed ribs with enough water to submerge them and bring to a rolling boil over high heat. This initial boil helps to eliminate any gamey odors.
Step 4
Rinse the ribs thoroughly after the initial boil. Gently rinse them under cold running water to remove any impurities.
Step 5
Begin the main braising process. Place the rinsed ribs in a pot and add 700ml of fresh water. Bring to a boil over high heat, then reduce the heat to medium and continue to simmer with the lid on.
Step 6
Allow the liquid to reduce. Continue simmering over medium-low heat until only about 100ml of the liquid remains. This concentrates the flavors and keeps the ribs juicy.
Step 7
Prepare the aromatics. Thinly slice the garlic and ginger. These will add wonderful fragrance to the braising liquid.
Step 8
Add all the seasoning ingredients to the pot with the ribs.
Step 9
Mix everything well. Ensure that each piece of rib is evenly coated with the marinade for consistent flavor.
Step 10
Braise to perfection. Bring the mixture back to a boil over high heat, then reduce to medium and simmer, stirring occasionally to prevent sticking.
Step 11
Adjust the sauce consistency. Continue to cook over medium heat until the sauce has reduced to about 100ml and has a glossy sheen.
Step 12
Serve and enjoy! Give everything one final mix, then plate the ribs beautifully. Using canned pineapple instead of sugar not only eliminates any gamey smell but also incredibly tenderizes the meat thanks to its natural enzymes. Enjoy these unbelievably tender and delicious braised ribs!
