Essential Jelly Ingredients
  • 100g Melon Syrup (for vibrant color and authentic flavor)
  • 300g Water
  • 6g Sheet Gelatin (for a firm, jiggly texture)
  • 100g Milk (for a smooth and creamy base)
  • 50g Heavy Cream (to enrich the flavor)
  • 20g Sugar (adjust to your preference)
  • 3g Sheet Gelatin (for the creamy milk layer)

Garnishes & Toppings
  • 100g Heavy Cream (whipped until soft peaks form)
  • Maraschino Cherries (for a pop of color and sweetness)

Cooking Instructions

Step 1

Begin by soaking the 6g of sheet gelatin in a bowl of cold water for about 10 minutes, or until it becomes soft and pliable. This ensures it dissolves smoothly later.

Step 2

In a saucepan, combine the 300g of water and 100g of melon syrup. Gently heat over low heat, stirring until the syrup is fully dissolved and the mixture is warm. Avoid boiling; you just want it heated through.

Step 3

Squeeze out any excess water from the softened gelatin and add it to the warm melon syrup mixture. Stir continuously until the gelatin is completely dissolved and no lumps remain. A whisk or spatula works well here.

Step 4

Pour the melon syrup mixture into your serving glasses or mold, filling them about two-thirds full. Place them in the refrigerator and let them chill for at least 1 hour, or until the jelly is firm to the touch. It should be set enough so that a gentle poke doesn’t leave an indentation.

Step 5

Now, let’s prepare the creamy milk layer. In a separate saucepan, combine 100g of milk, 50g of heavy cream, and 20g of sugar. Heat gently over low heat, stirring until the sugar dissolves and the mixture is warm and smooth. Be careful not to let it boil.

Step 6

Soak the remaining 3g of sheet gelatin in cold water until soft. Squeeze out the excess water and add it to the warm milk mixture. Stir until the gelatin is fully dissolved, creating a smooth liquid.

Step 7

Once the melon jelly layer is firm, carefully pour the milk mixture over it. Pour slowly and gently to avoid disturbing the set melon layer. Return the glasses to the refrigerator and chill for at least another hour, or until the milk layer is also completely set.

Step 8

After the jelly has fully set, top with freshly whipped cream and decorate with vibrant maraschino cherries for a beautiful finish. Enjoy your delightful homemade Melon Soda Jelly!
