Mazesoba: Rich and Flavorful Japanese Noodle Bowl (Easy Homemade Recipe)

Ingredients
- Ground pork 300g
- Udon noodles 1 serving
- Scallions 1 stalk
- Roasted chopped peanuts 2 Tbsp
- Garlic 4 cloves
- Lajo jang (spicy chili paste) 1 Tbsp
- Chungjungone Spicy Galbi Sauce 4 Tbsp
- Roasted seasoned seaweed sheets 2 sheets
- Egg 1
- Black pepper to taste
Cooking Instructions
Step 1
Begin by preparing the ground pork. Finely mince 4 cloves of garlic. In a pan with a little cooking oil over medium heat, add the minced garlic and 300g of ground pork. Break up the meat with a spatula and stir-fry until it’s no longer pink. Ensure the pork is cooked through.
Step 2
Once the pork is cooked, add 4 tablespoons of Chungjungone Spicy Galbi Sauce to the pan. This sauce will provide a deep savory flavor and a hint of sweetness. Stir well to coat the pork and continue to cook for a minute, making sure the sauce doesn’t burn.

Next, stir in 1 tablespoon of Ottogi Lajo Jang. This adds a gentle spiciness and a rich aroma that elevates the mazesoba. Continue to stir-fry for another 1-2 minutes until the pork mixture is glossy and well-coated with the sauces.
Step 4
Your delicious, savory, and slightly spicy pork topping is now ready! Transfer this cooked mixture to a separate bowl to cool slightly. Letting it cool allows the flavors to meld and deepen.
Step 5
Now, let’s prepare the toppings that will add texture and flavor. Finely chop 1 stalk of scallions. Cut the 2 roasted seasoned seaweed sheets into bite-sized strips (about 1cm wide). Have your 2 tablespoons of roasted chopped peanuts ready for a delightful crunch.
Step 6
Cook the udon noodles according to package directions, or for about 3 minutes in boiling water until tender yet chewy. Drain the noodles thoroughly to prevent them from becoming mushy.
Step 7
Assemble your mazesoba by placing the drained udon noodles in a serving bowl. Generously top with the cooked pork mixture. Sprinkle the chopped scallions, shredded seaweed, and chopped peanuts over the noodles. For an extra treat, you can add a soft-boiled or hard-boiled egg. Mix everything together and enjoy!
