When a friend visited, they brought a generous bunch of fresh Matsongyi mushrooms from their hometown. They were so large and vibrant, and I was incredibly grateful! My daughter absolutely loves these mushrooms, so I was thrilled. However, due to my busy schedule with janggu practice over the weekend, I missed the perfect opportunity to grill them with meat, which she enjoys so much. So, I decided to stir-fry them instead! My friend also mentioned they had mushrooms but weren’t sure how to cook them, so I thought this would be a great way to share a recipe and make a delicious mushroom stir-fry. While mushrooms alone are delicious, adding crabmeat (or imitation crab sticks) elevated the dish, giving it a more sophisticated flavor profile. Ingredients

  • Matsongyi mushrooms, 2 handfuls (approx. 200g)
  • Monster crab sticks or imitation crab sticks, 2 pieces

Seasoning

  • Oyster sauce, 1 Tbsp
  • Grapeseed oil, 2 Tbsp
  • Salt, a pinch
  • Pepper, a dash
  • Sesame oil, a little
  • Toasted sesame seeds, a little
  • Chopped green onion, a little

Cooking Instructions

Step 1

Gently rinse the fresh Matsongyi mushrooms under running water. Then, tear them by hand along their natural grain into bite-sized pieces. This helps to preserve their wonderful texture.

Step 2

Tear the monster crab sticks or imitation crab sticks into similar sizes as the mushrooms. Tearing them rather than using them whole allows the seasoning to distribute more evenly, resulting in a more flavorful dish.

Step 3

Heat a wok or a large skillet over medium heat. Add 2 tablespoons of grapeseed oil, then add the torn Matsongyi mushrooms. Stir-fry until the mushrooms release their moisture and begin to soften slightly.

Step 4

Once the mushrooms are partially cooked, add 1 tablespoon of oyster sauce and continue to stir-fry. Oyster sauce adds a wonderful umami depth that enhances the mushroom’s natural flavor.

Step 5

After the mushrooms have absorbed the oyster sauce and softened further, add the torn crab or imitation crab sticks to the pan. Gently stir-fry, being careful not to break the crabmeat apart, ensuring everything is well combined.

Step 6

When all ingredients are well mixed, season with salt to your taste and add a dash of pepper for extra aroma. Finally, drizzle in a little sesame oil and sprinkle with chopped green onions and toasted sesame seeds to finish.

Step 7

Transfer the delicious Matsongyi mushroom and crab stir-fry to a serving plate. It’s best enjoyed while still warm.
