Madeleine Batter Ingredients
  • 80g cake flour
  • 40g granulated sugar
  • 50g unsalted butter
  • 4 Tbsp high-quality matcha powder
  • 1 tsp baking powder
  • 2 eggs (room temperature)
  • 2 Tbsp lemon juice
  • 3 drops vanilla extract
  • 2 tsp powdered sugar (for dusting)

Cooking Instructions

Step 1

First, gently melt the butter. You can do this in the microwave for about 30 seconds to 1 minute, or until completely liquid. Let it cool slightly so it’s not too hot.

Step 2

In a mixing bowl, crack the 2 eggs and add all of the 40g granulated sugar.

Step 3

Using a whisk or an electric mixer, whip the eggs and sugar vigorously. Continue whipping until the mixture becomes a pale, creamy ivory color. This step is crucial for achieving the right texture.

Step 4

Once sufficiently whipped, the mixture will be frothy and will hold its shape briefly when drizzled. It should look like the consistency shown in the picture.

Step 5

In a separate bowl, place the 80g of cake flour.

Step 6

Add the 1 tsp of baking powder and the 4 Tbsp of matcha powder to the same bowl. It’s best to sift these dry ingredients together to ensure no lumps.

Step 7

Sift the combined dry ingredients (flour, baking powder, matcha) over the whipped egg mixture in 2-3 additions. Sifting ensures a smoother batter with no lumps.

Step 8

Using a spatula, gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix, as this can develop gluten and make the madeleines tough. Fold by cutting through the batter rather than stirring vigorously.

Step 9

As you fold, the batter will take on a beautiful green hue from the matcha. Continue folding until no streaks of dry flour are visible and the batter is smooth.

Step 10

Once the batter is smooth and the flour is fully incorporated, add the 3 drops of vanilla extract for added fragrance.

Next, add the 2 Tbsp of lemon juice for a touch of brightness.

Finally, pour in the melted and slightly cooled butter. Continue mixing for about a minute, ensuring you scrape the bottom of the bowl, until the butter is fully incorporated and the batter is smooth and emulsified. This prevents the butter and batter from separating.

Step 13

Prepare your madeleine pan by lightly greasing it with butter or spraying with baking spray to prevent sticking.

Step 14

Transfer the batter to a piping bag and pipe into the molds, or carefully spoon the batter into each mold. After filling, gently tap the pan on the counter a few times to release any air bubbles and to help the batter settle evenly.

Step 15

Bake in a preheated oven at 180°C (350°F) for 12-15 minutes. Baking times can vary depending on your oven, so watch for the edges to turn golden brown and the madeleines to puff up nicely.

Step 16

Once baked, carefully remove the madeleines from the pan and let them cool completely on a wire rack. However, they are also wonderfully delicious enjoyed warm right out of the oven!

Once cooled, dust the tops of the madeleines generously with the 2 tsp of powdered sugar, sifting it over them for a beautiful finish. Your delightful matcha madeleines are now ready to enjoy!
