This recipe features tender beef cuts, Anchangsal (diaphragm muscle) and Toshisal (outside skirt steak), marinated in a rich, savory galbi-style sauce. The marinade is designed to mimic the classic sweet and savory flavor of Korean beef ribs, allowing the natural taste of the meat to shine through. We’re going for a light marinade that’s meant to be dipped in a sauce, rather than heavily coating the meat. While you might not have a charcoal grill at home, using a grill pan or oven broiler can still yield delicious results. My kids absolutely loved it! Though grilling on an electric grill can take a bit longer, and cleaning the grates was a task, the final taste made it all worthwhile. I even found that quickly stir-frying any leftover marinated meat was equally delicious, proving that my kids will eat beef no matter how it’s cooked! So, I’ve decided to stick to pan-frying or grilling at home for now, though my mind can always change! It felt great to treat my family to these flavorful Anchangsal and Toshisal cuts, reminiscent of delicious galbi.   • Beef Toshisal (Outside Skirt Steak) 900g

Marinade

  • Water 2 cups
  • Soy Sauce 4 Tbsp
  • Fish Sauce (or Anchovy Extract) 1 Tbsp
  • Honey 2 Tbsp
  • Sugar 1 Tbsp
  • Black Pepper to taste
  • Chopped Green Onion to taste

Cooking Instructions

Prepare the Anchangsal and Toshisal. Gently pat the beef dry with paper towels to remove any excess blood for a cleaner taste and appearance.

Place the Anchangsal and Toshisal in a large bowl. Trim the beef to ensure an even thickness, which will help it cook uniformly.

To make the marinade, combine 2 cups of water, 4 Tbsp of soy sauce, 1 Tbsp of fish sauce (or anchovy extract), 2 Tbsp of honey, 1 Tbsp of sugar, a pinch of black pepper, and some chopped green onion in a bowl. Whisk everything together until well combined. You can substitute honey with corn syrup or rice syrup if preferred. For extra depth of flavor, consider adding minced garlic or ginger.

Add the prepared beef to the marinade. Gently mix and massage the marinade into the meat, ensuring all pieces are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. For an even richer taste, marinate for 1-2 hours.

While the meat is marinating, prepare a dipping sauce. You can create a simple sauce by mixing soy sauce with a touch of vinegar and wasabi, or use your favorite store-bought sauce.
