Super Simple Rice Thief! Delicious Marinated Egg Recipe
Hello everyone! This is Lee Geupsik. Today, I’ll share a recipe for ‘Gyeran Jang’ (marinated eggs) that’s incredibly simple yet so delicious it’ll make you finish a whole bowl of rice! It’s not difficult at all, so please give it a try. It’s perfect as a side dish for kids or as a late-night snack!
Ingredients (for 60 servings)- 70 eggs
- 1.5 liters water
- 500ml soy sauce
- 500g sugar
- 200ml mirin (cooking wine)
- 5 Cheongyang peppers
- 1 onion
- 200g minced garlic
- A pinch of red crushed pepper
- A pinch of black sesame seeds
Cooking Instructions
Step 1
First, prepare the boiled eggs. I prefer to boil the eggs by gently placing them into the boiling water without adding anything beforehand, as this helps the shells peel off more easily. While adding vinegar or salt to the water is another method, this way makes peeling much more convenient. Boil for about 10-12 minutes for hard-boiled eggs.
Step 2
Now, let’s make the delicious marinade for the eggs. In a large bowl, combine 1.5 liters of water, 500ml of soy sauce, and 500g of sugar. Stir well until the sugar is completely dissolved. Finely slice the Cheongyang peppers and add them. Finely mince the onion and add it as well. Next, add 200g of minced garlic, and for a touch of spice and visual appeal, add a pinch of red crushed pepper and black sesame seeds. Once all ingredients are well combined, carefully add the peeled boiled eggs to the mixture. Let it marinate in the refrigerator for at least one day to achieve the best flavor. If you wish to store it for a longer period, it’s recommended to boil the soy sauce mixture separately, let it cool completely, and then add the eggs for improved hygiene.
Step 3
Your delicious Gyeran Jang, with its tempting color, is now complete! Place it on a bowl of warm rice and break the yolk – it’s heavenly. Don’t discard the leftover marinade; it can be used in other dishes!
