Main Ingredients
  • 3.5kg fresh Aronia berries
  • 3.5kg sugar (equal weight to aronia)

Cooking Instructions

Step 1

Carefully remove the stems from each fresh aronia berry. Then, wash them thoroughly using baking soda. It’s crucial to drain the water completely after washing. Leaving excess moisture can shorten the shelf life of the syrup. Pat them dry with paper towels to ensure no water remains.

Step 2

Sterilize your glass container by boiling it in water and let it dry completely. This ensures hygiene. If you need to use the container immediately, wipe the inside thoroughly with a clean, dry towel to ensure there’s no moisture. Residual moisture can lead to mold or fermentation issues.

Step 3

Now, it’s time to mix the aronia berries and sugar. Combine the fresh aronia berries and sugar in a 1:1 ratio. Mix them well. Ensuring the aronia is completely dry is important here. Mix thoroughly so that the sugar coats each berry. You can adjust the sugar amount slightly based on your preference, but a 1:1 ratio ensures stable fermentation and preservation.

Step 4

Layer the sugar-coated aronia mixture into the sterilized glass container. Start with a layer of the aronia and sugar mixture at the bottom, then sprinkle another layer of sugar on top. Layering the aronia and sugar this way helps the sugar dissolve evenly and promotes good fermentation. Finish by topping with a layer of sugar to prevent the aronia surface from being exposed to air. Cover the opening with a clean cloth or plastic wrap secured with a rubber band, or place the lid on loosely (do not seal tightly). Leave it in a cool, dark place to ferment.
