- 3 Fresh Eggs
- 2 Tbsp Milk
- 2 Tbsp Scallions (finely chopped)
- 1 Tbsp Cooking Oil
- A pinch of Sesame Seeds

- 1 Tbsp Soy Sauce
- 1 Tbsp Sesame Oil
- 1 Tbsp Soy Sauce

Cooking Instructions
Step 1
First, wash and finely chop the scallions into small, round pieces (about 0.5 cm thick). Heat 1 tablespoon of cooking oil in a frying pan over medium-low heat. Add the chopped scallions and gently sauté them until they release their fragrant aroma and create a flavorful scallion oil. Be careful not to let them burn!
Step 2
Once the scallion oil is ready, crack 3 fresh eggs into a bowl. Remove the chalaza (the white, stringy bits) and whisk the eggs well. (For a cleaner taste, you can add 1 teaspoon of cooking wine or mirin.) Pour the whisked eggs directly into the frying pan and scramble them. Stir with chopsticks or a spatula to create fluffy curds as they cook.
Step 3
When the scrambled eggs are about 70-80% cooked, pour 2 tablespoons of fresh milk into the pan. The milk will make the eggs even softer and add a rich, creamy flavor. Gently stir the milk into the scrambled eggs and continue to cook over low heat until just done. Don’t overcook!
