Main Ingredients
  • 1 head of broccoli (approx. 200g)
  • 1 can (100g) of tuna, drained

Seasoning & Others
  • 2 Tbsp toasted sesame seeds
  • 1/2 Tbsp soy sauce
  • 1/2 Tbsp oligosaccharide (or corn syrup)
  • 3 Tbsp mayonnaise
  • 1 Tbsp plum extract (or 1/2 Tbsp sugar)
  • 1 pinch of salt (approx. 1g)

Cooking Instructions

Step 1

First, prepare the broccoli. Trim the tough bottom part of the stem, then break the head into bite-sized florets. You can also peel the stem thinly for a more tender texture.

Step 2

To remove any potential small bugs or dirt, soak the broccoli florets in water with 1 Tbsp of vinegar for about 10 minutes. Afterwards, rinse them thoroughly under running water several times. Gently shake off excess water.

Step 3

Bring about 1 liter of water to a rolling boil in a pot, adding 1 Tbsp of salt. Once boiling, add the prepared broccoli and blanch for exactly 1 minute. Be careful not to overcook, as it will become mushy! After blanching, do not rinse the broccoli under cold water. Instead, immediately remove it from the pot and let it cool down naturally. This method helps retain nutrients and keeps the broccoli crisp.

Step 4

Open the tuna can and let it sit for about 5 minutes. This allows volatile compounds like furan, which can cause a fishy smell, to evaporate. Then, drain the tuna thoroughly using a sieve to remove excess oil. Properly draining the oil is crucial for a non-greasy and clean-tasting salad.

Step 5

In a bowl, combine all the seasoning ingredients (soy sauce, oligosaccharide, mayonnaise, plum extract, and salt). Mix them well with a spoon to create a delicious dressing. Add the cooled broccoli and the drained tuna to the bowl. Gently toss everything together until well combined and the broccoli and tuna are evenly coated with the dressing.
