Essential Ingredients

  • 1 Fresh Live Sea Cucumber
  • Gochujang-based dipping sauce (to taste)
  • Toasted Sesame Seeds (for garnish)

Cooking Instructions

Step 1

First, prepare your fresh live sea cucumber. It’s crucial to thoroughly clean the surface to remove any dirt or sand. Gently scrub the sea cucumber’s exterior with a soft brush or your hands under cold running water, ensuring all crevices are clean. Washing it until it feels slightly squeaky is the first step to bringing out its natural flavor.

Step 1

Step 2

Sea cucumbers have a mouth and an anus. While they might not be immediately obvious, you need to identify and trim both ends. Typically, the mouth is somewhat rounded, and the anus is more pointed. Cut off about 1 cm from each end to remove these parts.

Step 2

Step 3

If this is your first time preparing sea cucumber, distinguishing between the front and back might seem tricky. Carefully examine the ends you just cut. You’ll notice slight protrusions (mouth) on one side and an opening (anus) on the other. Recognizing these parts will make the next step of removing the innards much easier.

Step 3

Step 4

Now, locate the flatter, underside of the sea cucumber. Using scissors, carefully make a long cut down the center of its belly. Be cautious not to cut too deeply; a careful incision along the middle will allow the sea cucumber to open up. This makes removing the internal organs straightforward.

Step 4

Step 5

Once you open the belly, you’ll see the internal organs, which often appear as yellowish or brownish string-like material. Gently scrape these innards out with your fingers until completely removed. After removing the organs, quickly rinse the inside of the sea cucumber under cold running water to wash away any remaining blood or residue. This is effective in eliminating any unpleasant smell.

Step 5

Step 6

Now it’s time to slice the thoroughly cleaned sea cucumber into bite-sized pieces. To maintain its chewy texture, it’s best to slice it to an appropriate thickness (about 0.5 cm), not too thin. Slicing at a slight angle will create a wider surface area, making the sashimi look more appealing. Cut into pieces that are easy to eat.

Step 6

Step 7

Serve the prepared sea cucumber sashimi with your favorite gochujang-based dipping sauce for a sweet and spicy kick, or with a sesame oil and sesame seed mixture for a nutty flavor. Arrange the sashimi attractively on a plate and finish with a sprinkle of toasted sesame seeds as a garnish. Your delicious and visually appealing sea cucumber sashimi is ready! Enjoy the exquisite taste of fresh sea cucumber!
