Hello everyone! This is Egeupsik. Today, instead of beef steak, we’ll be making a delightful chop steak using tender pork loin. This dish uses simple ingredients but creates a spectacular flavor, making it perfect for special occasions or when hosting guests.

  • Pork loin 3kg (prepared as 3-4cm cubes)
  • Minced garlic 200g
  • Bell peppers 6ea (using a variety of colors like red, orange, and yellow will make it more visually appealing)
  • Green peppers 3ea
  • Carrot 1ea
  • Onion 3ea
  • Store-bought steak sauce 1.9kg
  • Oyster sauce 300g
  • Herb salt 150g
  • Black pepper 200g
  • Mirin (cooking wine) 200ml

Cooking Instructions

First, prepare the vegetables. Cut the onions, bell peppers, and green peppers into large, square pieces about 3-4cm in size. Slice the carrot about 0.5cm thick and cut it into attractive half-moon shapes. Cutting the vegetables this large helps maintain a pleasant texture when eaten with the steak, enhancing its deliciousness.

For the star of the dish, the pork loin, cut it into cubes approximately 3-4cm. (If you purchased it pre-cubed, you can skip this step.) Season the cubed pork with herb salt, black pepper, and mirin (cooking wine) to remove any pork odor and add flavor. Let it marinate for about 10 minutes. This step is the secret to making the meat extra tender and flavorful.

Heat a generous amount of cooking oil in a large pan. Add the marinated pork and minced garlic, then stir-fry over medium-high heat. Ensure the exterior of the pork is nicely browned. (Tip: If using an oven, you can bake it at 180°C (350°F) for 15 minutes for a wonderful flavor.)

Once the pork is browned, add the oyster sauce and stir-fry together. The savory umami from the oyster sauce will seep into the meat, creating a richer taste.

When the pork is almost cooked through, add all the prepared vegetables. Adding firmer vegetables like carrots first, followed by onions, green peppers, and bell peppers, allows you to control their cooking time and retain a crisp texture. Stir-fry just until the vegetables are slightly tender.

Finally, pour in a generous amount of the store-bought steak sauce. Quickly stir-fry to coat all the ingredients evenly. As the sauce simmers and thickens, it will meld with all the ingredients, resulting in a glossy, delicious chop steak.
