My twins absolutely adore lamb! Eating out for lamb can be quite pricey, though my daughter does treat us sometimes. Still, I thought it would be much better to make it at home. I discovered that my favorite butcher had lamb, and I had no idea until then! I immediately bought some so we could feast on it at home. The lamb pieces were quite large, so I decided to cook some in the air fryer and some in a pan. I didn’t try it myself, but my younger son couldn’t stop exclaiming how delicious it was, even without rice! He ate his fill with just the lamb. Now that I can buy good quality lamb nearby, I can make this more often. And the best part? It costs less than 1/5th of the restaurant price! Lamb Steak Ingredients- Lamb 1.075 kg
- 1 cup Soju (for removing gamey odor)
- 2 Tbsp Cheongju (rice wine)
- 4 Tbsp Mirin (sweet rice wine)
- Herb salt (to taste)
- 6 Bay leaves
- 1/2 cup Garlic cloves
Special Sauce Ingredients- 5 Tbsp Water
- 1 Tbsp Teriyaki sauce
- 1 Tbsp Steak sauce
- 1 Tbsp Honey
- 1 tsp Mirin (sweet rice wine)
- 5 Tbsp Water
- 1 Tbsp Teriyaki sauce

Cooking Instructions
Step 1
First, it’s crucial to thoroughly drain the blood from the lamb. Use kitchen towels to gently pat and absorb any blood from the surface of the lamb. This step helps reduce any gamey odor and enhances the meat’s natural flavor.
Step 2
In a bowl, combine the drained lamb with 1 cup of soju, 2 tablespoons of cheongju, 4 tablespoons of mirin, herb salt, 6 bay leaves, and 1/2 cup of garlic cloves. Gently mix everything together to marinate the lamb. Let it rest in the refrigerator for at least 30 minutes, or ideally overnight. This marinating and resting period will tenderize the meat and deepen its flavor.
Step 3
Now, let’s cook the lamb to perfection. If using an air fryer, cook at 180°C (350°F) for 15-20 minutes, flipping halfway through. If using a frying pan, heat the pan over medium-high heat and sear the lamb on both sides until nicely browned. You can also cook the bay leaves and garlic cloves alongside the lamb for added aroma. Adjust the cooking time to achieve your desired level of doneness.
Step 4
While the lamb is cooking, let’s prepare the delicious special sauce. In a small saucepan, combine 5 tablespoons of water, 1 tablespoon of teriyaki sauce, 1 tablespoon of steak sauce, 1 tablespoon of honey, and 1 teaspoon of mirin. Simmer over low heat, stirring occasionally, until the sauce thickens slightly. You’ll have a wonderfully sweet and savory sauce.
