Basic Tteokbokki Ingredients
  • 350g Tteokbokki rice cakes
  • 250g Beef brisket
  • 3 sheets of fish cakes (rectangular)
  • 20g Cabbage
  • 1 stalk of green onion
  • 1/2 onion
  • 6 perilla leaves
  • 2 hard-boiled eggs (fully cooked)

Broth Ingredients for Deep Flavor
  • 13 dried anchovies (for broth, guts removed)
  • 1 liter water

Beef Brisket Marinating Ingredients
  • Pinch of black pepper
  • 2 Tbsp cooking wine (Mirin)
  • 1/3 Tbsp minced garlic

Golden Ratio Seasoning Paste Ingredients
  • 4 Tbsp gochujang (red chili paste)
  • 2 Tbsp corn syrup
  • 2 Tbsp soy sauce
  • 1 Tbsp plum extract
  • 1.5 Tbsp sugar
  • Pinch of black pepper

Cooking Instructions

Step 1

01. Making Anchovy Broth – 1: First, prepare the anchovy broth to add depth to your tteokbokki. Remove the intestines (guts) from 13 dried anchovies for broth and place them all in a broth bag. This makes it easy to remove the anchovies after boiling.

Step 2

02. Making Anchovy Broth – 2: Pour 1 liter of water into a pot, add the anchovies in the broth bag, and bring to a boil over high heat. Once the water starts boiling, reduce the heat to medium and simmer for another 20 minutes to extract the anchovy flavor. After 20 minutes, remove the broth bag and discard the anchovies to complete the delicious broth.

Step 3

03. Boiling Eggs: Prepare hard-boiled eggs to accompany the tteokbokki. Fill a pot with enough water to cover the eggs, add 2 eggs, 1/2 tablespoon of salt, and 1 tablespoon of vinegar. Bring to a boil over high heat, and once boiling vigorously, simmer for at least 15 minutes until fully cooked. After 15 minutes, rinse the eggs in cold water, let them cool, and then peel them.

Step 4

04. Marinating Beef Brisket: Marinate 250g of beef brisket, the star of this tteokbokki, by gently mixing it with 2 tablespoons of cooking wine (Mirin), 1/3 tablespoon of minced garlic, and a pinch of black pepper for at least 5 minutes. This step helps remove any gamey odor and enhances the flavor of the beef brisket.

05. Preparing Vegetables and Fish Cakes: Prepare the vegetables that will add color and texture to the dish. Thinly slice 1/2 onion, and cut 1 stalk of green onion diagonally. Cut 20g of cabbage into bite-sized pieces, and roll 6 perilla leaves before thinly slicing them. Cut 3 rectangular fish cakes into triangles.

06. Pan-Frying Beef Brisket: Heat a frying pan over medium heat and add the marinated beef brisket. Pan-fry for about 3 minutes until lightly browned, being careful not to burn it. This step further enhances the nutty flavor of the beef brisket.

Step 7

07. Making the Delicious Seasoning Paste: In a bowl, combine 4 tablespoons of gochujang, 2 tablespoons of corn syrup, 2 tablespoons of soy sauce, 1 tablespoon of plum extract, 1.5 tablespoons of sugar, and a pinch of black pepper. Stir well until all ingredients are evenly mixed to create the seasoning paste.

Step 8

08. Cooking Tteokbokki – 1: Pour 800ml of the prepared anchovy broth and the seasoning paste into a pot and bring to a boil over high heat. Stir to ensure the seasoning paste dissolves well in the broth. Once the broth starts boiling, add the sliced onion, cabbage, and fish cakes. Continue to boil over high heat for 3-4 minutes.

09. Cooking Tteokbokki – 2: Add the sliced green onions and tteokbokki rice cakes to the pot and boil over high heat. Once the broth returns to a boil, reduce the heat to medium and cook for 10 minutes. Then, reduce the heat to low and cook for another 5 minutes, allowing the rice cakes to become tender.

Step 10

10. Finishing with Beef Brisket and Perilla Leaves: Finally, add the pan-fried beef brisket and the sliced perilla leaves to the tteokbokki. Gently press down with a ladle to submerge the ingredients in the sauce. Simmer for an additional 5 minutes over medium-low heat until you have a visually stunning and flavorful beef brisket tteokbokki.
