Avocado is packed with vitamins and minerals, making it a wonderfully healthy addition to your diet. Transforming this creamy fruit into sushi elevates the experience, offering a sophisticated taste that’s both rich and refreshing. Sushi Ingredients- 2 ripe avocados
- 2 bowls of cooked rice (approx. 400g)
- 1 sheet of nori (seaweed)
- 3 Tbsp rice vinegar
- 2 Tbsp sugar
- 1 piece of konbu (kelp) (approx. 5x5cm)
- 1/8 tsp fine salt
Cooking Instructions
Step 1
First, let’s prepare the sushi vinegar (sushi-zu), which is key to delicious sushi rice. In a small bowl, add 3 tablespoons of rice vinegar.
Step 2
Next, add 2 tablespoons of sugar and 1/8 teaspoon of fine salt to the bowl.
Step 3
Place the piece of konbu into the sushi vinegar mixture and let it steep for about 10 minutes to infuse its umami flavor. You can remove the konbu afterward.
Step 4
In a larger bowl, place 2 bowls of warm cooked rice. Gently fluff the rice with a spatula to prevent clumping and let it cool down to a comfortable temperature for handling. This is when we’ll mix in the sushi vinegar.
Step 5
Now, let’s prepare the star of our sushi: the avocado. Avocados are best when their skin is dark and they yield slightly to gentle pressure. This indicates they are perfectly ripe and will offer the best flavor. If yours is too firm, allow it to ripen further at room temperature.

Slice the avocado in half lengthwise. Gently twist your hands in opposite directions to separate the halves. To remove the large pit, carefully insert the tip of your knife into it and give it a slight twist; the pit should come out easily.

Once the pit is removed, slice the avocado into approximately 1cm thick pieces. Aim for slices that will comfortably fit on top of your sushi rice.

Take one sheet of nori and cut it into strips about 1cm wide. Then, cut each strip to a length of about a quarter of the nori sheet, creating pieces that are perfect for wrapping around the sushi rice.

Pour 6 to 7 spoonfuls of the prepared sushi vinegar (sushi-zu) over the cooled rice. Gently fold the vinegar into the rice using a rice paddle, being careful not to mash the grains. Taste and adjust the amount of vinegar if needed, based on your preference.

Now, shape the sushi rice into individual portions. If the rice feels too sticky or is difficult to handle, you can add a little more sushi vinegar to achieve the right consistency. Form them into neat, bite-sized oval shapes.
Step 11
Place an avocado slice, sized to match your sushi rice ball, on top of each portion of shaped rice. Gently press down to secure it.

Wrap a strip of nori around the sushi, securing the avocado slice. You can tuck the end of the nori underneath the sushi, or moisten it with a tiny bit of water to help it stick. This step adds a lovely texture and visual appeal.
