Pasta Ingredients

  • 2 servings pasta (approx. 200g)
  • 180g prepared beef tripe
  • 1/4 onion
  • A small piece of bell pepper (approx. 1/4)
  • A handful of chives
  • 1/4 stalk green onion

Seasoning for Tripe and Sauce

  • 1 tsp salt
  • 1 tsp ginger powder
  • A pinch of black pepper
  • 1 tbsp basil pesto
  • 1 tbsp minced garlic
  • 2 tbsp olive oil

Cooking Instructions

Step 1

I’m using a 180g pack of pre-cleaned beef tripe. Place the tripe on a parchment-lined baking sheet in an air fryer and bake at 180°C (350°F) for 10 minutes. (If using raw tripe, rinse it in cold water and pat dry with paper towels before cooking.) While the tripe is cooking, bring a pot of generously salted water to a boil and cook the pasta for 1 minute less than the package instructions. Reserve about 1 cup of the pasta water before draining.

Prepare your vegetables: thinly slice the onion and bell pepper, and finely chop the green onion. Cut the chives into 4-5cm lengths; these will add a fresh aromatic finish.

Heat 2 tablespoons of olive oil in a large pan over medium-low heat. Add the minced garlic and sauté until fragrant. Then, add the sliced onion, bell pepper, and green onion. Stir-fry until the onion becomes translucent, being careful not to burn the vegetables.

Add the air-fried beef tripe to the pan with the sautéed vegetables. Cook together for 1-2 minutes, allowing the savory flavor of the tripe to meld with the vegetables.

Add the drained pasta directly into the pan. Gently toss to combine with the tripe and vegetables, ensuring the pasta strands don’t clump together.

Stir in 1 teaspoon of salt and 1 tablespoon of basil pesto. Toss everything together until well combined. To create a luscious, creamy sauce, gradually add about 1/2 cup of the reserved pasta water while stirring. Adjust the amount of pasta water to achieve your desired sauce consistency – aim for a rich, coating texture.

Finally, add the chopped chives and stir-fry over high heat for about 30 seconds, just until they are wilted and fragrant. Be careful not to overcook the chives, as you want to preserve their fresh flavor. This step brings together the rich taste of the tripe with the vibrant aroma of the chives, creating a truly spectacular beef tripe pasta. Serve immediately while hot!
