Creamy Mashed Potatoes- 2 large potatoes
- 1 tbsp unsalted butter
- Pinch of fine salt
- Pinch of pepper
- 2-3 tbsp milk (optional)
- 1/2 tsp mild wasabi (optional)
Cooking Instructions
Step 1
Preparing the Abalone: First, thoroughly clean the abalone shells using a brush or toothbrush to remove any grit. Gently insert a spoon between the abalone meat and the shell and carefully separate them. From the detached abalone meat, gently pull out the innards (liver) and remove the hard mouth part and tentacles. Make shallow, crisscross cuts on both sides of the abalone meat. This scoring helps the abalone cook more tenderly and absorb flavors beautifully.
Step 2
Making Creamy Mashed Potatoes: Peel and dice the potatoes into large chunks. Place them in a microwave-safe bowl, cover with plastic wrap, and microwave for about 5 minutes. Check for tenderness; if a fork easily pierces them, they’re cooked. Drain any excess water. While still hot, transfer the potatoes to a bowl and mash them thoroughly with butter, salt, and pepper. For an extra creamy texture, gradually stir in 2-3 tablespoons of warm milk. For a delightful kick, consider adding a touch of mild wasabi to balance the richness. Aim for a smooth and velvety mashed potato.
Step 3
Marinating the Abalone Livers: To eliminate any gaminess, place the separated abalone livers in a small bowl and toss them with 2 tablespoons of cooking wine (like Cheongju). Let them marinate briefly for a cleaner taste.
Step 4
Crafting the Rich Abalone Liver Sauce: Take the marinated abalone livers (from 4 abalone). In a blender or food processor, combine the livers with 1/2 cup of heavy cream (or milk) and blend until smooth. Finely chop the small onion. Melt 1 tbsp of butter in a pan over medium heat and sauté the chopped onion until translucent and fragrant. Pour in the blended abalone liver mixture and simmer gently over low heat. Season with salt and pepper to your preference. Continue to cook until the sauce slightly thickens, being careful not to let it burn. This creates a wonderfully rich and savory sauce.
Step 5
Searing the Abalone: Heat 1 tbsp of butter in a clean pan over medium-high heat. Place the scored abalone in the hot pan and sear for about 1-2 minutes per side until nicely golden brown. Avoid overcooking to maintain a tender texture; a quick sear is key. This process locks in the juices and creates a delightful texture.
Step 6
Elegant Plating: Warm your serving plates. Spoon a generous portion of the creamy mashed potatoes onto each plate, creating a smooth base. Arrange the beautifully seared abalone steaks on top of the mashed potatoes.
Step 7
Adding the Sauce and Garnishes: The abalone liver sauce can be drizzled directly over the abalone, or served in a separate small ramekin for a more elegant presentation. Garnish the plate with fresh arugula or mixed greens, and perhaps some sliced strawberries for a touch of color and freshness.
Step 8
A Symphony of Flavors: Dip the perfectly cooked abalone into the homemade, rich, and creamy abalone liver sauce. The tender, slightly chewy abalone combined with the velvety sauce is an exquisite experience. This dish is truly a luxurious treat!
