Ingredients- Pork neck or Beef short rib 250g
- 1/8 head Cabbage
- Scallions
- Up to 10 cloves Garlic
- Salt
- Pepper
- Cooking wine (Cheongju)
- Sesame oil
Cooking Instructions
Step 1
1. Pat the meat (pork neck or beef short rib) dry with paper towels to remove excess blood. Trim any excess fat or thin membranes, then cut into bite-sized pieces. Season the meat with salt, pepper, and 1 tablespoon of cooking wine (Cheongju) to tenderize and remove any gamey odors.

2. Add 2-3 tablespoons of water to a pot. Place the seasoned meat in the pot and cover with a lid. Cook over medium heat until steam starts to escape, then reduce the heat to low and let it cook thoroughly until tender. (Tip: A heavy-bottomed pot without steam vents is ideal for retaining moisture. If your pot has steam vents, cover them with a damp towel.)

3. While the meat is cooking, prepare the vegetables. Tear the cabbage into bite-sized pieces. Cut the scallions into approximately 5cm lengths, separating the white and green parts. Slice the garlic cloves thinly.
Step 4
4. When the meat is almost cooked through, add the sliced garlic, cabbage pieces, and the white parts of the scallions to the pot. Let them cook together for a short while.
Step 5
5. Once steam starts to rise again, add the green parts of the scallions. Cover the pot with the lid again and turn off the heat. The residual heat will gently cook the scallion greens.
Step 6
6. Finally, season with salt and pepper to taste. Drizzle in 1 tablespoon of sesame oil for a nutty aroma and flavor. Gently mix everything together to ensure the meat and vegetables are evenly coated. Your delicious and nutritious low-moisture stir-fry is ready!
