Low-Carb High-Fat Inari Sushi with Cabbage Salad Filling

Discover a healthier take on Inari sushi! This recipe replaces traditional rice with a vibrant, chopped cabbage salad, making it a perfect low-carb, high-fat (keto-friendly) diet meal. It’s gentle on the stomach and wonderfully filling.
Ingredients- 17 pieces of fried tofu pouches (inari age), drained of oil
- 1/8 head of fresh cabbage
- 2 hard-boiled eggs
- 2 strips of imitation crab meat (kani kama)
- 1 wedge of ripe apple
- A small handful of fresh arugula
- 1 Tbsp mayonnaise
- 1/2 Tbsp arugula pesto
- 1/2 Tbsp mustard
- A little honey-glazed black olives (optional)
Cooking Instructions
Step 1
First, finely shred the cabbage. Soak the shredded cabbage in cold water for about 10 minutes to enhance its crispiness, then rinse it thoroughly under running water.
Step 2
Use a salad spinner to thoroughly drain the water from the shredded cabbage. Place the well-drained cabbage into a mixing bowl, ready for the next step.
Step 3
Peel the hard-boiled eggs and core the apple. Finely chop the eggs, apple, and imitation crab meat into small pieces, and add them to the bowl with the cabbage. Mix everything together well.
Step 4
Wash and roughly chop the fresh arugula, then add it to the bowl. Stir in the mayonnaise, arugula pesto, and mustard to enhance the flavor. Add the honey-glazed black olives if using, to balance the taste.
Step 5
Using a spatula or spoon, gently mix all the ingredients in the bowl until well combined. Ensure the dressing evenly coats all the ingredients. You can adjust the seasoning to your preference at this stage.
Step 6
Prepare the drained fried tofu pouches. Gently open one end of each pouch to create a pocket. Carefully and firmly press the prepared salad mixture into each tofu pouch, filling it completely. Be mindful not to overstuff or press too hard, which could tear the tofu. Shape them nicely to complete your delicious diet Inari sushi!
