A perfect meal for those following low-carb, keto, or ketogenic diets! Instead of regular white rice, this recipe uses cauliflower rice to create a satisfying egg fried rice that is high in fullness and low in carbohydrates. Enjoy a hearty and delicious meal even while on a diet.
Main Ingredients- Cauliflower rice 300g (freshly chopped or frozen)
- Cooked white rice 2 Tbsp (omit for strict keto)
- Eggs 2
- Scallions, a small amount (thinly sliced)
- Garlic 1 clove (thinly sliced)

Cooking Instructions
Step 1
First, prepare the cauliflower rice, which is ideal for a keto diet. Using store-bought frozen cauliflower rice makes cooking very convenient. You can also chop fresh cauliflower yourself, but frozen is recommended for ease.
Step 2
Introducing ‘refined coconut oil,’ an essential for ketogenic and low-carb diets. Through a refining process, it has a higher smoke point than regular coconut oil, making it less prone to oxidation even at high heat, and contains 0g of trans fat. Also, the distinct coconut aroma is removed, making it suitable for everyone. If you don’t have refined coconut oil, you can substitute it with cultured butter. Avoid processed vegetable fats like margarine.

It’s crucial to stir-fry frozen cauliflower rice directly in a dry pan over medium heat without thawing, to thoroughly dry it out. This step removes the raw vegetable taste characteristic of frozen produce and improves its texture.

Continue stir-frying the cauliflower rice over medium heat until its moisture has sufficiently evaporated.

Transfer the stir-fried cauliflower rice to a separate bowl for now.

If you are following a strict clean keto diet, you can omit this step. Adding 2 tablespoons of cooked white rice can enhance the flavor of the fried rice.
