Healthy Bibimmyeon Made with Konjac Noodles: A Must-Try for Dieting!
Using the ‘noodle-style konjac’ my daughter bought for her diet, I’ve now made a delicious bibimmyeon (spicy mixed noodles) following the Janchi Guksu (banquet noodles). Its chewy texture and the perfect balance of sweet and spicy sauce are exceptional, and it’s highly recommended for dieters as it can be enjoyed without calorie concerns!
Main Ingredients- 1 pack Noodle Konjac (approx. 200g)
- Kimchi made with young radish greens (gat kimchi), as needed
Cooking Instructions
Step 1
First, prepare the sauce ingredients. Mince 1 Tbsp of garlic. Chop about 50g of the young radish kimchi into bite-sized pieces (about 1cm long). The spiciness and crisp texture of the kimchi will add wonderful flavor to the bibimmyeon.
Step 2
Rinse the noodle konjac thoroughly under running water. Then, blanch it in boiling water for just 1-2 minutes. Be careful not to overcook it, as it can become mushy. After blanching, drain the konjac noodles completely in a colander. Properly draining the water is crucial for the sauce to adhere well and not become watery.
Step 3
Now, let’s make the delicious bibim sauce. Heat a pan over medium heat and add a little cooking oil. Sauté the minced garlic for about 30 seconds until fragrant. Be careful not to burn the garlic. Once the garlic aroma is released, add 1 Tbsp of gochujang and 2 Tbsp of rice wine, and stir-fry together. Finally, add the chopped kimchi and continue to stir-fry for another 1-2 minutes until all ingredients are well combined. The tangy flavor of the kimchi and the spiciness of the gochujang will create a deep, rich taste.
Step 4
Place the prepared konjac noodles in a large bowl. Pour all of the freshly made sweet and spicy sauce over the noodles. Use chopsticks or tongs to gently mix the konjac noodles, ensuring they are evenly coated with the sauce. It’s important to loosen the noodles while mixing so they don’t clump together.
Step 5
Finally, drizzle in 1 Tbsp of sesame oil for a nutty aroma and sprinkle with a pinch of sesame seeds. The nuttiness of the sesame seeds will further enhance the overall flavor of the bibimmyeon. Give everything a final light toss, and your delicious konjac bibimmyeon is ready! Feel free to add shredded cucumber or lettuce if you like.
