Main Ingredients

  • 6-7 large cabbage leaves
  • 1 chicken breast
  • 1 Tbsp cooking wine (or sake)
  • Pinch of salt
  • Pinch of black peppercorns

Cooking Instructions

Step 1

First, prepare your vegetables. Halve the mild green chilies lengthwise, scrape out the seeds, and thinly julienne them. Prepare the yellow and red bell peppers in the same way: remove seeds and julienne thinly. Wash and prepare any fresh seaweed, sea greens for wraps, and a handful of mixed salad greens you have. Feel free to use any vegetables available in your refrigerator!

Wash the cabbage leaves thoroughly. Carefully peel off 6-7 outer leaves. Bring a pot of water to a boil and blanch the cabbage leaves for about 2-3 minutes until they become tender and pliable. Be careful not to overcook them, as they can become too soft. Once blanched, rinse the leaves under cold water to stop the cooking process and drain them well.

In a pot of boiling water, add the chicken breast, cooking wine, a pinch of salt, and peppercorns. Cook until the chicken breast is thoroughly cooked through. Once cooked, remove the chicken breast from the water and let it cool slightly. Then, shred it into bite-sized pieces using your hands.

For each blanched cabbage leaf, carefully slice away or thinly cut down the thick, hard core at the base of the leaf. This will make rolling much easier. Arrange the prepared shredded chicken breast and julienned vegetables, along with seaweed and sea greens if using, onto a cabbage leaf. Starting from the base, roll the cabbage leaf tightly, tucking in the sides as you go, to form a neat roll. Repeat with the remaining ingredients to create your delicious Chicken Breast and Cabbage Rolls!
