The Banh Mi sandwich is made by splitting these rice baguettes and filling them with various delicious ingredients. If you love bread but are looking for healthier options, pay attention!   • 1 Rice Baguette
  • 100g Chicken Breast
  • 1 Tomato
  • 30g Fresh Cilantro
  • Store-bought Pickled Daikon Radish
  • 1 Tbsp Mayonnaise
  • 2 Tbsp Balsamic Dressing
  • Sriracha Sauce (to taste)

First, prepare the rice baguette. Carefully slice the baguette lengthwise down the middle with a knife to open it. For an extra crispy texture, toast it in a preheated oven at 200°C (400°F) for about 3 minutes. If you don’t have an oven, you can use an air fryer or lightly toast it in a pan until warm and crisp.

Rinse the cilantro thoroughly under cold water. If the stems are too tough, trim them off, and use mainly the leafy parts for the best flavor and texture. Cilantro adds a touch of authentic Vietnamese flavor! While it can be polarizing, those who love it adore its unique aroma. If cilantro isn’t your preference, consider using fresh arugula for a pleasant peppery note.

Cut the chicken breast into bite-sized pieces. I initially thought of halving the tomato, but it was quite large, so I finely chopped it to make it easier to fit into the sandwich. Chopping it allows the tomato flavor to distribute evenly throughout.

For the pickled daikon radish, I used a store-bought version. You can find them not only in round slices but also julienned! They are readily available at most supermarkets. Ensure you squeeze out as much liquid as possible from the pickled daikon before using it. If you prefer to make your own, a simple ratio of 1:1:1 for vinegar, sugar, and water, with a pinch of salt, soaked overnight, makes a delicious homemade version.

Now, let’s spread some delicious sauces inside the baguette. Drizzle your desired amount of sriracha sauce onto the inside of the toasted baguette, followed by about 1 tablespoon of mayonnaise. Spread both sauces evenly to create a flavorful base. The combination of spicy and creamy will elevate the sandwich’s taste.

Layer the prepared chicken breast, chopped tomato, and the squeezed pickled daikon radish into the baguette. Gently press down as you fill it to ensure the ingredients stay neatly inside and don’t spill out. Finally, top generously with fresh cilantro (or arugula) to complete your delicious Banh Mi sandwich!
