Lemon Cream Sauce

  • 1 Tbsp Lemon Dill Butter
  • 1 Tbsp Minced Onion
  • 1 Tbsp Minced Garlic
  • 2/3 cup Heavy Cream
  • Salt to taste

Cooking Instructions

Step 1

[Lemon Dill Butter] Finely chop the fresh dill, removing any tough stems. This will infuse the butter with its fresh, herbaceous aroma.

Step 1

Step 2

Using a grater or zester, finely grate the yellow peel of the lemon to create zest. Be careful to only get the yellow part, as the white pith can be bitter. This zest will add a bright, citrusy note.

Step 2

Step 3

In a bowl, combine the softened butter, chopped dill, lemon zest, and 1 tablespoon of lemon juice. Mix thoroughly with a spatula or fork until all ingredients are well incorporated into the butter.

Step 3

Step 4

To make it easy to use, portion the lemon dill butter as desired. Wrap it tightly in plastic wrap, then wrap it again in parchment paper or wax paper to hold its shape. Refrigerate until firm. This allows for convenient slicing and portioning later.

Step 4

Step 5

Prepare the sea bass fillet. Score the skin side of the fish with 2-3 shallow cuts. This helps prevent the skin from curling as it cooks and allows flavors to penetrate better. Season the fish generously with salt and pepper, then rub it lightly with olive oil.

Step 5

Step 6

Now, let’s cook the fish in the air fryer! Place the seasoned sea bass fillet, asparagus spears, and cherry tomatoes into the air fryer basket. Top the fish generously with slices or dollops of your prepared lemon dill butter. Bake at 180°C (350°F) for about 20 minutes, or until the fish is cooked through and the skin is crispy. Cooking time may vary depending on the thickness of the fish and your air fryer model. The asparagus and tomatoes will also become tender and slightly roasted.

Step 6

Step 7

[Lemon Cream Sauce] While the fish is baking, prepare the sauce. Melt 1 tablespoon of your lemon dill butter in a pan over medium-low heat. Add the finely minced onion and minced garlic, and sauté until the onion is translucent and fragrant, about 2-3 minutes.

Step 7

Step 8

Pour in the heavy cream and bring the mixture to a gentle simmer. Cook, stirring occasionally, until the sauce thickens to your desired consistency. Season with salt to taste. Adjust seasoning as needed for a balanced flavor.

Step 8

Step 9

To serve, arrange the baked sea bass, asparagus, and cherry tomatoes on a plate. Generously spoon the warm lemon cream sauce over the fish and vegetables. Garnish with a sprinkle of fresh baby greens for a touch of color and freshness. Enjoy your delicious and aromatic Lemon Dill Butter Baked Fish!
