Chef Lee Chan-won’s Easy and Delicious Scallion Salad from ‘Chef King’
Introducing Lee Chan-won’s signature scallion salad from his appearance on ‘Chef King’ as a rookie chef! This recipe features a wonderfully crisp texture and savory flavor, perfect as a side dish for rice or to accompany meat dishes. It’s simple yet incredibly delicious!
Main Ingredients- 2 large scallions (focus on the white parts)
- 1/4 onion
Cooking Instructions
Step 1
First, wash the scallions thoroughly under running water. Trim them to about 10cm lengths, focusing on the white parts, then cut them in half lengthwise. Peel the onion and slice it thinly into slivers.
Step 2
Bring a pot of water to a rolling boil. Once boiling, add the prepared scallions and blanch them for just about 10 seconds – be careful not to overcook, as they can become mushy. Quickly remove the blanched scallions, rinse them under cold water to cool them down, and then squeeze out any excess water thoroughly.
Step 3
Place the squeezed scallions and sliced onions into a bowl. Add the soy sauce (1/2 Tbsp), gochugaru (1/2 Tbsp), minced salted shrimp (1/2 Tbsp), and vinegar (1 Tbsp). Gently mix everything together with your hands, ensuring the seasoning is evenly distributed throughout the scallions.
Step 4
Arrange the well-seasoned scallion salad attractively on a serving plate. Finally, sprinkle a pinch of sesame seeds over the top for an extra nutty aroma and enhanced flavor. This scallion salad is best enjoyed immediately for maximum crispness!
