Korean Braised Tofu (Dubu Jorim) – Simple & Delicious Recipe
Easy Homemade Dubu Jorim Inspired by ‘Sumine Banchan’

Main Ingredients- 1 block Firm Tofu (approx. 300g)
- 1 medium Onion
- 1/2 King Oyster Mushroom
- 1/2 stalk Scallion (Green Onion)
- 2 pieces Dried Kelp (for dashi broth)
Seasoning Sauce- 3 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 2 Tbsp Gochugaru (Korean Chili Flakes)
- 2 Tbsp Cooking Wine (Mirin or Rice Wine)
- 2 Tbsp Plum Extract (Maesil Extract)
- 1 Tbsp Oligosaccharide (optional, for sweetness)
- 1 Tbsp Perilla Oil (or Sesame Oil)
- 3 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 2 Tbsp Gochugaru (Korean Chili Flakes)
- 2 Tbsp Cooking Wine (Mirin or Rice Wine)
- 2 Tbsp Plum Extract (Maesil Extract)
- 1 Tbsp Oligosaccharide (optional, for sweetness)
- 1 Tbsp Perilla Oil (or Sesame Oil)
Cooking Instructions
Step 1
First, prepare the vegetables. Slice the onion thinly or into slightly thicker pieces and place them at the bottom of the pot. This prevents the tofu from sticking and burning, while also adding a subtle sweetness to the dish. Slice the king oyster mushroom into bite-sized pieces.
Step 2
Cut the tofu into slices about 1.5-2cm thick. Lightly pat dry the tofu with paper towels. Heat a little oil in a pan over low heat and pan-fry both sides of the tofu until golden brown. This helps the tofu hold its shape and improves its texture. Arrange the pan-fried tofu slices on top of the prepared onions in the pot. Add the sliced king oyster mushrooms as well.
Step 3
Now, let’s make the delicious seasoning sauce. In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp minced garlic, 2 Tbsp gochugaru, 2 Tbsp cooking wine, and 2 Tbsp plum extract. Mix well. Add the 2 pieces of dried kelp to the pot along with the sauce. The kelp will add a deeper, richer umami flavor to the broth.
Step 4
It’s time to simmer! Cover the pot with a lid and bring to a boil over medium heat. Once it starts boiling, reduce the heat to low and let it simmer so the flavors meld beautifully.
Step 5
While it’s simmering, periodically spoon some of the broth over the tofu and vegetables. This ensures the sauce evenly coats everything and enhances the flavor. Continue this process until the sauce has reduced to your desired consistency.
Step 6
Once the sauce has thickened and all the ingredients are well-infused with flavor, it’s time for the final touch. Add the sliced scallions to the pot. Drizzle in 1 Tbsp oligosaccharide (optional, for added sweetness) and 1 Tbsp perilla oil (or sesame oil) to finish. Serve this delicious, flavorful braised tofu warm with a bowl of steamed rice!
