Korean Beef Brisket Stir-fry with Scallions and Lettuce
Quick & Easy One-Pan Meal: Beef Brisket, Scallions, and Lettuce Stir-fry
This recipe uses premium Korean beef brisket, a thoughtful gift from my youngest child who is living away from home. It fills me with both gratitude and a touch of melancholy. To honor their thoughtfulness, I decided to make this delicious stir-fry. It’s a wonderfully quick and satisfying dish perfect for busy days. The rich flavor of the brisket, the aromatic scallions, and the crisp lettuce come together beautifully.
Main Ingredients- 180g Korean beef brisket
- 12 stalks fresh scallions
- 1 large leaf crisp lettuce (like iceberg or romaine)
Seasoning Ingredients- 1 Tbsp soy sauce
- 1 tsp sugar
- 1/2 Tbsp minced garlic
- 1 Tbsp cooking wine (mirin or rice wine)
- 1 tsp fish sauce (anchovy sauce)
- 1 Tbsp plum extract
- Pinch of black pepper
- 1 Tbsp sesame oil
- 1 Tbsp sesame seeds
- 1 Tbsp soy sauce
- 1 tsp sugar
- 1/2 Tbsp minced garlic
- 1 Tbsp cooking wine (mirin or rice wine)
- 1 tsp fish sauce (anchovy sauce)
- 1 Tbsp plum extract
- Pinch of black pepper
- 1 Tbsp sesame oil
- 1 Tbsp sesame seeds
Cooking Instructions
Step 1
Prepare the Korean beef brisket. Gently pat it with paper towels to remove any excess moisture for a cleaner taste and texture.
Step 2
Wash the scallions thoroughly under running water. Trim off the root ends and cut them into 4-5 cm lengths. Cutting them to this size ensures they are easy to eat after stir-frying.
Step 3
Wash the lettuce and pat it dry. Tear it into bite-sized pieces. Tearing rather than chopping creates a more pleasant texture.
Step 4
Heat a pan over medium heat. Lay the brisket slices flat in the pan, ensuring they don’t overlap. Cook them on both sides until golden brown and slightly crisped. If there’s excess oil, you can carefully wipe some away with paper towels.
Step 5
Once the brisket is almost cooked through, turn off the heat temporarily. Add all the seasoning ingredients except for the sesame oil and sesame seeds (soy sauce, sugar, minced garlic, cooking wine, fish sauce, plum extract, black pepper) to the pan. Give it a gentle stir to combine the seasonings with the brisket.
Step 6
Turn the heat back on to medium-low. Add the cut scallions to the pan. Stir-fry quickly until the scallions just begin to wilt. Be careful not to overcook them, as they can become tough.
Step 7
As the scallions soften, add the prepared lettuce. Stir gently just once or twice to combine. Lettuce wilts quickly, so minimal stirring helps maintain its crispness – this is the secret to a great texture! Turn off the heat, then drizzle in the sesame oil and sprinkle with sesame seeds. Give it a final gentle toss to coat everything.
Step 8
Transfer the delicious stir-fried brisket and vegetables to a serving plate immediately. This dish is best enjoyed hot and makes for a wonderful meal or side dish.
