King Oyster Mushroom Tteokgalbi

Let’s make a nutritious tteokgalbi using king oyster mushrooms! It’s also great for cooking activities with children.
Main Ingredients- 600g Ground Beef
- 1/2 Onion
- 2 King Oyster Mushrooms
- A little Carrot
- 3 Scallions (Green Onions)
- Sesame oil or cooking oil, for cooking
Beef Seasoning- 1 Tbsp Minced Garlic
- 4 Tbsp Soy Sauce
- 3 Tbsp Sugar
- 2 Pinches Salt
- 1 Tbsp Sesame Oil
- A little Black Pepper
- 1 Tbsp Minced Garlic

Cooking Instructions
Step 1
Slice the king oyster mushrooms lengthwise into approximately 1.5cm thick pieces. (I divided the cap and stem parts in half, and then cut the cap into 4 pieces and the stem into 4 pieces.) Pat the ground beef dry with paper towels to remove any excess liquid and prepare it. Removing excess blood is crucial for a clean, un-gamey flavor.
Step 2
Finely mince the carrot, onion, and scallions (or green onions). Finely minced vegetables blend well with the meat mixture, resulting in a smoother texture.
Step 3
Add all the finely minced vegetables to the ground beef that has had its liquid removed. Then, add all the seasoning ingredients (minced garlic, soy sauce, sugar, salt, sesame oil, black pepper) according to the recipe.
Step 4
Knead the mixture thoroughly with your hands as if you’re vigorously mixing it. Kneading for about 5-7 minutes will make the meat chewy and ensure the tteokgalbi doesn’t fall apart when cooking, creating a delicious final dish.
Step 5
Take portions of the kneaded meat, about the size of a ping pong ball, and form them into round, flat patties by pressing them gently in your palm. Place one prepared king oyster mushroom slice on top of each patty.
Step 6
Carefully wrap the meat around the mushroom, shaping it neatly. This helps to keep the mushroom moist and flavorful as it cooks inside the meat.
Step 7
Heat a frying pan with a generous amount of oil over medium-low heat. Sear the tteokgalbi patties until golden brown on all sides. Once browned, reduce the heat to low, cover the pan with a lid, and cook until the inside is thoroughly cooked through and tender. Flip occasionally to prevent burning.
Step 8
Arrange the beautifully cooked King Oyster Mushroom Tteokgalbi on a plate. Your elegant holiday dish or perfect appetizer for guests is now ready!
