King Oyster Mushroom Salad with Perilla Powder
Delicious and Nutty King Oyster Mushroom Salad
My family absolutely loves mushrooms, so I decided to make a healthy, nutty, and flavorful mushroom dish today! Let’s get started on this delightful recipe.
Main Ingredients
- 1 pack King Oyster Mushrooms
- 2 Tbsp Perilla Powder (Deulkkae Garu)
- A little Green Onion, finely chopped
- 2 Tbsp Water
Seasoning
- 1 Tbsp Anchovy Sauce (or Soy Sauce for soup)
- 1/3 tsp Salt (adjust to taste)

Cooking Instructions
Step 1
Gently wash the king oyster mushrooms under running water. Slice them into bite-sized pieces, about 1-1.5 cm thick, for a pleasant texture. If the stems are very thick, you can halve them lengthwise.
Step 2
Place the prepared mushrooms and 2 tablespoons of water into a microwave-safe container or bag. Loosely cover it, or prick a few holes in the plastic wrap if using. Microwave on high for 3 minutes until the mushrooms are tender and moist.
Step 3
Carefully drain any excess liquid from the cooked mushrooms. Be cautious as they will be hot; using a sieve or a piece of cheesecloth is recommended. Let the mushrooms cool slightly while you prepare the seasonings.
Step 4
Add 1 tablespoon of anchovy sauce (or Korean soup soy sauce) to the slightly cooled mushrooms to enhance their flavor.
Step 5
Season with 1/3 teaspoon of salt, adjusting to your preference. The amount of salt may vary depending on the saltiness of your anchovy sauce.

Generously add 2 tablespoons of perilla powder for that signature nutty and rich flavor that elevates the mushrooms.

Finally, add a small amount of finely chopped green onion for a fresh aroma. Scallions can also be used.

Gently mix all the ingredients together with your hands, ensuring the seasonings are evenly distributed. Be careful not to overmix or mash the mushrooms.
