King Oyster Mushroom Aglio e Olio
Making Aglio e Olio with King Oyster Mushrooms
I made Aglio e Olio pasta using King Oyster mushrooms.
Main Ingredients
- Spam 1/2 can (approx. 200g)
- King Oyster Mushrooms 1 handful (approx. 100g)
- Chili pepper 1
- Pasta for 2 servings
- Garlic 3 cloves
Seasoning & Others
- Salt 1/2 Tbsp (for boiling pasta)
- Olive Oil 4-5 Tbsp
- Pasta Water 1/2 cup (approx. 100ml)

Cooking Instructions
Step 1
First, bring a large pot of water to a rolling boil. Once boiling, add 1/2 Tbsp of salt and the pasta for 2 servings. Cook for about 8 minutes, or according to package directions, aiming for an al dente texture.
Step 2
While the pasta is cooking, thaw the frozen King Oyster mushrooms in water. Once thawed, gently squeeze out any excess water before setting them aside.
Step 3
In a separate frying pan, heat a generous amount of olive oil over low heat. Add the thinly sliced garlic cloves and sauté them gently until fragrant. It’s important to infuse the oil slowly rather than burning the garlic.
Step 4
As the garlic begins to turn golden, add the diced Spam and the prepared King Oyster mushrooms to the pan. Stir-fry until the Spam is lightly browned and the mushrooms have released some moisture. Then, add the deseeded and chopped chili pepper (or peperoncino) and stir-fry for another minute to incorporate its flavor.
Step 5
Once the ingredients are mostly cooked, transfer the boiled pasta directly into the frying pan. Add about 1/2 cup (approx. 100ml) of the reserved pasta water. Stir and toss everything together over medium heat, allowing the pasta water to emulsify with the oil, creating a light sauce that coats the pasta.
Step 6
Continue to cook and toss until most of the pasta water has evaporated and the pasta is glossy. Your King Oyster Mushroom Aglio e Olio is now complete! Serve immediately and enjoy this flavorful dish.
