Main Ingredients
- 1 whole head of Kimchi (approx. 500g, aged kimchi recommended)
- 1 can of Tuna (150g, including the oil)

Step 1
The first step to making a delicious Kimchi Tuna Stir-fry! Wash one head of kimchi thoroughly and chop it into bite-sized pieces (about 2-3 cm wide). Cutting it too small might cause it to break apart during cooking, so aim for a moderate size. Using aged kimchi will give it a deeper flavor.
Step 2
Place all the chopped kimchi into a wide pan or wok. Open the can of tuna and add all the oil from the can along with the tuna. This tuna oil is one of the secrets to adding flavor to the kimchi. Stir-fry over medium heat until the kimchi is slightly cooked.

Once the kimchi is somewhat cooked, add about one cup (approx. 180ml) of water, measured with a paper cup. This water prevents the kimchi from burning and creates a stew-like consistency. Cook over medium heat until the water is about half evaporated. Be careful not to let it dry out completely.

Now it’s time to add the star of our stir-fry, the tuna! While there’s still some moisture left, add the entire can of tuna. If you prefer less oil, you can drain some of it, but I recommend adding it all for extra flavor.

Mix the tuna and kimchi well to ensure they are evenly combined. Then, continue to stir-fry over medium-low heat for about 3 to 5 minutes. During this process, the savory flavor of the tuna and the umami of the kimchi will meld together, creating a richer taste.

If the mixture has become too dry while stir-frying, it’s time to add the seasonings. Proceed to the next step when the moisture level is just right – not too much, not too little.

Add 1 teaspoon of Dasida (or another flavor enhancer) to the stir-fried kimchi and tuna, and mix thoroughly. Dasida helps to balance the seasoning and enhance the overall savory flavor. Taste it, and if it’s too bland, you can add a little soy sauce.

Finally, just before turning off the heat, drizzle in 1 tablespoon of perilla oil for a nutty aroma and sprinkle with 1 tablespoon of toasted sesame seeds for a tempting finish.
