Perfect for a chilly winter day, Kimchi Ttaraegi noodles offer a wonderfully warming and savory broth with chewy noodles. This dish is an excellent hangover remedy and a unique delicacy that can easily be prepared with simple ingredients, delivering a deep and rich flavor that anyone can enjoy.

Main Ingredients

  • 100g Noodles (Somyeon or Jungmyeon recommended)
  • 2 heads Ripe Kimchi (finely chopped)
  • 600ml Anchovy Broth (or kelp broth)
  • 1/3 cup Kimchi Juice (approx. 60ml)
  • 1/2 stalk Scallion (chopped)
  • A small bunch of Chives (chopped into bite-sized pieces)

Seasoning & Garnish

  • 0.5 Tbsp Minced Garlic (approx. 5g)
  • 0.5 Tbsp Sesame Oil (approx. 5ml)
  • A pinch of Ground Black Pepper
  • Shredded Seaweed (optional garnish)

Cooking Instructions

Step 1

First, prepare 600ml of anchovy broth. You can use store-bought broth or make your own by simmering dried anchovies and kelp. Finely chop the ripe kimchi into about 1cm width pieces.

In the prepared anchovy broth, add the chopped kimchi and 1/3 cup of kimchi juice. Bring to a boil over high heat. Let it simmer to allow the kimchi to soften and its flavors to infuse into the broth. It’s important to extract the tangy and savory essence of the kimchi.

Once the kimchi broth is vigorously boiling, add 100g of noodles. Gently stir the noodles to prevent them from sticking together as they cook.

After the noodles float and begin to cook, continue to boil for about 3 minutes. Check if the noodles are cooked to your liking. Then, add the chopped scallions and 0.5 Tbsp of minced garlic, and simmer for another moment. Adding garlic will deepen the broth’s flavor profile.

Finally, add the chopped chives and cook briefly just to wilt them. This helps preserve the chives’ fresh aroma and vibrant color. Overcooking the chives can make them mushy.

Ladle the Kimchi Ttaraegi noodles into a serving bowl. Just before eating, drizzle with 0.5 Tbsp of sesame oil, a pinch of black pepper, and optionally, a generous sprinkle of shredded seaweed for a delicious finish. Enjoy this warming dish while it’s piping hot!
