  • 1/2 Onion (thickly sliced)
  • 1/2 Scallion/Green Onion (thickly sliced)

To begin making a delicious Kimchi Pork Stir-fry, prepare your aged kimchi. Cut the kimchi into bite-sized pieces, about 2-3cm in size. Then, mix in 1 tablespoon of sugar and gently toss. This step helps to mellow the sourness of the kimchi, making it softer and more palatable for the stir-fry.

Next, prepare the complementary vegetables. Thickly slice half an onion. Cut half a scallion (green onion) into large, diagonal pieces. Slicing them thickly ensures they retain a pleasant texture after stir-frying.

Now, it’s time to prepare the star of the dish: the pork. Cut 400g of pork into manageable, bite-sized pieces. Using thinly sliced pork, like that used for bulgogi, is highly recommended as it absorbs the sauce well and cooks quickly, resulting in a tender and flavorful dish.

In a bowl, combine 2 tablespoons of gochujang, 2 tablespoons of gochugaru, 1.5 tablespoons of sugar, 2 tablespoons of soy sauce, 1 tablespoon of mirin, 1 tablespoon of minced garlic, and a pinch of black pepper. Whisk everything together until well combined. This balanced sauce is key to the dish’s deliciousness!
