Main Ingredients- 2/3 cup well-fermented kimchi (drained slightly)
- 1 cup cooked rice (warm)
- 2 sheets of dried seaweed (nori)
- 2 eggs
- 1/2 stalk green onion (including white and green parts)
- A small piece of carrot
Cooking Instructions
Step 1
First, gather all the ingredients for your kimchi fried rice and sushi rolls. You’ll need about 2/3 cup of well-fermented kimchi, 1 cup of warm cooked rice, 2 sheets of nori, 2 eggs, half a stalk of green onion, a small piece of carrot, oyster sauce, sesame oil, and sesame seeds.
Step 2
Finely chop the kimchi using scissors or a knife. If your kimchi is very juicy, gently squeeze out some of the excess liquid to prevent the fried rice from becoming too moist.
Step 3
Finely julienne or mince the carrot.
Step 4
Chop the green onion finely. Don’t worry too much about the shape, as it will be cooked into the fried rice. Including the green parts adds extra flavor and color.
Step 5
Heat a little cooking oil in a pan over medium-low heat. Add the chopped green onions and sauté until fragrant to create green onion oil. Once the onions are fragrant, add the minced carrot and cook until slightly tender. Then, add the chopped kimchi and stir-fry until it softens. When the kimchi is almost cooked through, add 1/2 tablespoon of oyster sauce (or soy sauce) and mix well.
Step 6
Add the warm cooked rice to the pan. Using a spatula, gently break up any clumps and mix the rice with the kimchi mixture until well combined. Stir-fry until the rice is fluffy and the grains are coated with the kimchi seasoning. This ensures each grain of rice is flavorful. Finally, stir in 1 teaspoon of sesame oil and 1 teaspoon of toasted sesame seeds for a delicious and aromatic kimchi fried rice.
Step 7
Prepare two sheets of nori for rolling. Place one sheet of nori on a bamboo sushi mat. Spread the slightly cooled kimchi fried rice thinly and evenly over the nori, leaving a small border at the top. Avoid packing the rice too tightly, as it can make rolling difficult.
Step 8
Whisk the eggs and cook them into thin omelets in a lightly oiled pan. Once cooked, let them cool slightly and then place the egg omelet over the kimchi fried rice. If you reserved some of the sautéed carrots or green onions, you can add them here as well.
Step 9
Using the bamboo mat, carefully roll the nori, rice, and egg together, pressing gently to create a firm roll. This combination of spicy kimchi fried rice and delicate egg omelet is incredibly satisfying. If you’re a fan of kimchi fried rice, you will absolutely love this!
Step 10
This super simple Kimchi Fried Rice Egg Roll Sushi is incredibly easy to make and tastes fantastic! It’s a perfect hearty breakfast option for busy mornings or a convenient and appealing lunchbox meal. It’s delicious even without exotic ingredients, and its ease of eating makes it a hit for everyone.
Step 11
If a whole roll seems like too much, half a roll is perfectly satisfying. Serving it with sweet, in-season Korean melon makes it even more enjoyable for kids. Melon is a refreshing fruit rich in Vitamin C and potassium, making it a great palate cleanser. It’s a wonderful choice for a snack or as a fresh addition to your meal.
