This is a special kimchi fried rice recipe that my son absolutely loves! I wanted to enjoy it in a slightly different way than the usual, and this recipe was born from that idea. It’s a flavor that both children and adults will adore, making it a dish that’s quickly devoured.
Main Ingredients- 100g minced pork
- Kimchi, to taste (about 1 cup)
- 1/4 carrot, finely diced
- 1/4 zucchini, finely diced
- 2 eggs
- Crumbled roasted seaweed, for garnish

Cooking Instructions
Step 1
First, season the 100g of minced pork with a pinch of black pepper and 1 Tbsp of cooking wine. This helps to remove any gamey odors and tenderizes the meat. Mix well and let it marinate for a while.

Prepare the 1/4 carrot and 1/4 zucchini. Finely dice them into small cubes so they are easy for children to eat; this also adds a pleasant texture and vibrant color. If the pieces are too large, it can be difficult for kids to chew.

Heat a pan with a little cooking oil and add the marinated minced pork. Stir and break up the meat as it cooks. Once it’s partially cooked, add the diced carrots and zucchini. Continue to stir-fry until the vegetables soften slightly.

Chop the well-fermented kimchi into bite-sized pieces. If your kimchi is too sour, you can add a little sugar, but the kimchi’s natural flavor is usually sufficient. Cutting the kimchi into appropriate sizes is important so it blends well with the rice and doesn’t feel too large.

Add the chopped kimchi to the pan with the cooked pork and vegetables. Stir-fry them together, making sure to mix occasionally to prevent sticking. Cook until the kimchi’s refreshing flavor melds with the savory pork.

Now, let’s make the fluffy scrambled eggs that will add extra flavor to the fried rice! You can use a separate pan or push the kimchi mixture to one side of the current pan and scramble the 2 eggs in the empty space. Avoid overcooking; they should be soft and creamy to blend well with the rice.
