Cooking Instructions

Step 1

When you finish eating napa cabbage kimchi (especially homemade kimchi), you’ll often have radish strips and kimchi juice left over. Don’t discard these flavorful remnants; save them separately. They’re great for stews, but making fried rice with them is a truly special treat.

Step 2

Thoroughly wash the green onion, then finely chop both the white and green parts. This will add a wonderful scallion aroma to your fried rice.

Step 3

Prepare about 3-4 bowls of cooked rice. I’m using oat rice for extra nutrition, but regular white rice or pre-packaged rice (about 4 individual packs) will also work well. If your rice is very dry and crumbly, it might clump together when frying, so slightly cooled rice is ideal.

Step 4

Heat 3 tablespoons of butter oil in a pan. If you’re using regular butter, melt about 1 tablespoon. If you don’t have butter, cooking oil is a suitable alternative. The richness of the butter will make your kimchi fried rice even more delicious.

Step 5

Once the butter oil is melted in the pan, add the chopped green onions and sauté for about 30 seconds until fragrant. Stir-fry over medium-low heat to prevent burning.

Step 6

Now, add the reserved kimchi seasoning (including radish strips) to the pan. Add 2-3 tablespoons of sugar and a pinch of ground black pepper. Adjust the sugar amount based on the kimchi’s sourness and saltiness. Stir-fry for about 3 minutes until the flavors meld together. Taste and if it’s too bland, add more kimchi or sugar; if you prefer less sweetness, feel free to omit the sugar.

Step 7

Add the prepared rice to the well-stirred kimchi mixture. Gently mix and fry, using a spatula to break up any clumps without mashing the rice grains. Continue stir-frying for about 2-3 minutes. This quick stir-frying will coat each grain of rice with the flavorful kimchi seasoning, creating a delicious fried rice. After adding the rice, reduce the heat to medium-low to prevent sticking and burning.

Step 8

Finally, sprinkle 1 tablespoon of toasted sesame seeds over the fried rice for an extra nutty aroma and delicious finish.

Step 9

I had a boiled egg ready, so I placed it on top of the fried rice and garnished it with spinach leaves for a pretty presentation. My daughter loved how it looked! A simple fried egg (especially sunny-side up) would also be a wonderful topping. Enjoy your delightful meal!
