Super Simple Earthenware Pot Kimchi Fried Rice Recipe
Kimchi fried rice is a dish you can whip up in a flash when you have no side dishes! It tastes even better when made in a hot stone pot. ♡ I’ll share a super simple recipe.
Main Ingredients- 1/3 head of ripe kimchi
- 1 can Spam or similar processed meat
- 1 can tuna (drained)
- Gim (seaweed flakes) to taste
- 1 serving of rice
Seasoning & Others- 2 Tbsp dark soy sauce
- 1 Tbsp red chili powder (gochugaru)
- 1 Tbsp sesame oil
- 1 Tbsp cooking oil

Cooking Instructions
Step 1
First, prepare the key ingredients that will determine the flavor of your kimchi fried rice. Finely chop the ripe kimchi into bite-sized pieces (about 1-2 cm). Dice the Spam (or similar processed meat) into small cubes, matching the size of the kimchi. Drain the tuna can thoroughly. Set aside the gim (seaweed flakes) for garnish. Have 1 serving of warm rice ready.
Step 2
Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the chopped kimchi and stir-fry for about 5 minutes until softened. This process mellows the sourness of the kimchi and intensifies its savory flavor as moisture evaporates. Using scissors to cut the kimchi can make this step quicker and easier.
Step 3
Once the kimchi is sufficiently stir-fried, add the diced Spam and drained tuna to the pan. Continue to stir-fry, mixing them well with the kimchi until the Spam is lightly browned and the tuna is incorporated.
Step 4
When all ingredients are well combined, add 1 Tbsp of red chili powder and 2 Tbsp of dark soy sauce. Stir-fry everything together for another 10 minutes. The soy sauce adds depth and umami, while the chili powder gives the kimchi fried rice its characteristic color and a touch of spice. Be mindful of the heat to prevent burning.
Step 5
Your delicious fried kimchi, Spam, and tuna mixture is now complete! If you prefer a softer texture for your kimchi fried rice, you can continue to stir-fry the mixture over low heat for an additional 5 minutes to reduce moisture.
Step 6
Now, prepare your earthenware pot. Place the pot over low heat and drizzle 1 Tbsp of sesame oil on the bottom, spreading it evenly. The sesame oil will heat up slightly, adding a nutty aroma. Keep the heat on low.
Step 7
Add 1 serving of warm rice to the heated earthenware pot. Spread the rice evenly with a spoon. Let it cook over low heat for 3-5 minutes until the bottom layer of rice starts to toast and form a slight crust. This step adds a wonderful texture to the earthenware pot kimchi fried rice.
Step 8
Once the rice has slightly crisped, turn off the heat. Generously spoon the prepared kimchi fried mixture over the rice in the pot. Sprinkle with the gim (seaweed flakes) for an extra touch of flavor and visual appeal.
