Ingredients

  • 8 large leaves of aged kimchi (choose ones with large leaves)
  • 8 slices of beef brisket (for grilling)
  • 1 to 1.5 bowls of cooked rice (warm)
  • 1 to 2 Tbsp of ssamjang (Korean dipping sauce)
  • 1 Tbsp of sesame oil
  • 1 Korean chili pepper (e.g., Cheongyang chili)

To preserve the crispiness of the aged kimchi, rinse the kimchi leaves thoroughly under cold running water. Gently squeeze out any excess water. Set aside. (Be careful not to squeeze too hard, as this can diminish the kimchi’s flavor).

Finely mince the Korean chili pepper. If you prefer a spicier kick, you can use up to two peppers.

In a bowl, combine the warm cooked rice with the minced chili pepper, ssamjang, and sesame oil. Mix well until evenly combined to create seasoned rice. Adjust the amount of ssamjang to your taste.

Grill the beef brisket slices in a pan over medium heat until golden brown and slightly crispy. Avoid overcooking, as the brisket can become tough. A quick sear on both sides is ideal to maintain its savory flavor.
