  • 1/4 medium-sized Korean radish (Mu)
  • A small amount of green onion

First, wash the Korean radish thoroughly under running water and peel it. Then, cut it in half and slice it thinly to about 0.3 cm. Next, julienne it into 5cm lengths. Using a mandoline slicer can make this process easier and more uniform. Julienne the green onion to a similar length as the radish, matching the quantity.

Place the julienned radish in a bowl. Add 2 Tbsp of gochugaru and 1/2 Tbsp of soy sauce (or fish sauce). Gently mix them together. This step helps the radish absorb the color and initial seasoning, making it taste better. It’s crucial to use fresh, crisp radish for the best mu saengchae. Limp radish won’t yield a good texture, no matter how well seasoned.

Now, add 1 Tbsp of sugar, 1 Tbsp of sesame oil, and 1 Tbsp of toasted sesame seeds. Mix gently again until everything is well combined. If you prefer a tangier flavor, you can add 1/2 Tbsp of vinegar. Ensure all seasonings are evenly distributed throughout the radish. Taste it, and if it feels a bit bland, add a tiny pinch more salt to adjust the flavor. Your delicious radish salad is ready!
