Main Ingredients
- 1/2 can Ham (approx. 150g)
- 1/2 Carrot (small size)
- 1/2 Onion (medium size)
- 1 Potato (small size)
- 1 Tbsp minced Scallion (green onion)
- 1 Tbsp Cooking Oil
- 3 bowls Rice
- 3 Eggs
- 1 tsp Salt
- Pinch of Black Pepper
Cooking Instructions
Step 1
Peel the potato and dice it into small, approximately 0.5cm cubes. Soak the diced potato in cold water for about 5 minutes to remove excess starch; this prevents the rice from clumping when fried. Drain the water completely.
Step 2
Heat a pan over medium heat and add 1 tablespoon of cooking oil. Once the pan is hot, add the finely minced onion, diced carrot, drained potato, and the ham diced into small cubes. Stir-fry until the vegetables are translucent and the potatoes are slightly tender, about 5 minutes.
Step 3
Once the vegetables and ham are partially cooked, add the minced scallion and stir-fry for another minute until fragrant. The aromatic scallion will enhance the overall flavor of the fried rice.
Step 4
Add the 3 bowls of cooked rice to the pan with the stir-fried ingredients. Use a spatula to break up any clumps of rice and mix everything evenly. Season with a pinch of black pepper and 1 teaspoon of salt. Continue to stir-fry for about 3-4 minutes until the rice grains are fluffy and well-separated. Ensuring each grain is coated with seasoning is key.
Step 5
Transfer the finished ham and vegetable fried rice to a serving plate. Top with a freshly fried egg for an extra appealing and satisfying meal, especially for children. You can also serve with a side of ketchup or soy sauce, according to your preference.
