- 1 bowl of cooked rice
- 120g fresh chicken tenderloin
- 1/3 onion
- 300ml milk
- 2 Tbsp spinach pesto (homemade or store-bought)
- Pinch of salt
- Pinch of black pepper
- 100ml heavy cream
Cooking Instructions
Step 1
Dice the chicken tenderloin into bite-sized pieces (about 1-2cm). Place the chicken in a bowl, season lightly with salt and pepper. Finely mince the onion. Heat a frying pan over medium heat with a little olive oil. Add the seasoned chicken tenderloin and cook until lightly browned on all sides. Once the chicken is cooked, add the minced onion and sauté until the onion becomes translucent, releasing its aroma.
Step 2
To the pan with the cooked chicken and onion, add the cooked rice and all the milk. Using a spatula or spoon, break up the rice so it doesn’t clump, and simmer over medium-low heat, stirring gently. Cook for about 5-7 minutes, allowing the rice to absorb the milk and become tender, and the sauce to thicken. Stir frequently to prevent sticking to the bottom of the pan.
Step 3
Once the risotto has reached a nice creamy consistency, stir in the heavy cream and spinach pesto. Continue to cook for another 1-2 minutes, stirring well, allowing the rich creaminess and fresh spinach flavor to meld together. Finally, season with salt to taste. For an extra layer of flavor, you can add a sprinkle of grated Parmesan cheese and stir gently until melted. Serve immediately while warm for the best taste!
