Hello everyone, this is Yang Geng. My baby lost his appetite after being sick, but when I made these chicken nuggets, they became a total ‘rice thief’! Today, I’m sharing my recipe for these delicious rice-stealing chicken nuggets.
Main Ingredients- 180g boneless, skinless chicken thigh meat
- 1/2 onion
- 2 cups breadcrumbs
Seasoning- 1 tsp minced garlic
- 2 Tbsp milk
- 2 Tbsp starch (cornstarch or potato starch)

Cooking Instructions
Step 1
First, finely chop the onion. If using a food processor or blender, this will be much easier. Then, add the boneless, skinless chicken thigh meat, cut into manageable pieces, to the processor along with the chopped onion. Process them together until finely minced. Ensuring the chicken is finely ground is key for a pleasant texture.
Step 2
To the finely minced chicken and onion mixture, add 1 tsp of minced garlic, 2 Tbsp of milk, 2 Tbsp of starch, and 1 Tbsp of curry powder. Knead the mixture thoroughly until it becomes cohesive and slightly sticky. Kneading well helps the nuggets hold their shape and improves the texture when cooked.
Step 3
While you are kneading the mixture, prepare about 2 cups of breadcrumbs by spreading them out on a wide plate or tray. Having plenty of breadcrumbs ready ensures that each nugget can be fully coated for a crispy exterior.
Step 4
Check the consistency of the kneaded mixture. It should be firm enough to shape by hand without being too sticky or crumbly. This consistency is ideal for forming the nuggets.

Now, shape the mixture into your desired nugget forms. You can make them round and flat, or elongated, choosing shapes that are easy for your child to hold. Generously coat each shaped nugget with the prepared breadcrumbs, ensuring all sides are covered. Place the breaded nuggets on plastic wrap, stacking them carefully. Tightly wrap the nuggets with the plastic wrap to help them hold their shape, then place them in the freezer for at least one day until solid. Once frozen, you can individually re-wrap each nugget with plastic wrap, place them in a resealable zipper bag, and store them in the freezer for future use.

Before cooking, take the nuggets from the freezer and let them thaw slightly. Heat a generous amount of oil in a pan over low heat. Cook the nuggets slowly, flipping them occasionally, until they are golden brown and crispy on both sides. Be patient, as the breadcrumbs can burn easily. Cooking on low heat ensures the inside is cooked through while the outside becomes perfectly crisp.
