Cooking Instructions
Step 1
First, carefully prepare all the ingredients needed to make Tteokbokki Gangjeong. You can use either mill-tteok (wheat flour rice cakes) or ssal-tteok (rice flour rice cakes), depending on your preference.
Step 2
Prepare the rice cakes for cooking. If your rice cakes are frozen, briefly blanch them in boiling water for about 10-20 seconds. This will soften them and prevent them from breaking during cooking. If the rice cakes are a bit hard, soak them in cold water for about 5-10 minutes to soften. If the rice cakes are already soft, you can skip this step.
Step 3
Now, let’s make the delicious sweet sauce that kids will absolutely love! In a wide bowl or mixing bowl, combine 1/2 Tbsp gochujang, 5 Tbsp ketchup, 1 Tbsp soy sauce, 1 Tbsp oyster sauce, 2 Tbsp oligosaccharide, 1 Tbsp sugar, and finally, 3 Tbsp water. Use a whisk or spoon to mix everything thoroughly until smooth and no lumps remain. Well-mixed sauce ensures the flavor is evenly distributed on the rice cakes, making them taste great!
Step 4
Drain the rice cakes completely after soaking or blanching them. Any remaining water can cause oil splattering during cooking and will prevent the rice cakes from achieving a nice, slightly fried texture.
Step 5
Heat a pan over medium heat and add a generous amount of cooking oil. Add the drained rice cakes and stir-fry them, almost as if you’re deep-frying them, over medium heat until they are golden brown and slightly crispy on the outside. This step is key to the delicious texture of this dish. Shake the pan or flip the rice cakes occasionally to ensure even cooking.
Step 6
Once the rice cakes are cooked to a slightly fried consistency, pour all the prepared sauce into the pan. Reduce the heat to medium-low and quickly stir and coat the rice cakes with the sauce using a spatula. Continue to stir-fry for about 1-2 minutes until the sauce coats the rice cakes with a nice glaze.
Step 7
This is the final step for your Tteokbokki Gangjeong! Turn off the heat completely. Now, add 1 Tbsp of sesame oil to enhance the flavor and gently toss the rice cakes so they don’t stick together. If desired, crush the prepared nuts and sprinkle them on top. This not only makes the dish look appealing but also adds a nutty crunch, completing your fantastic ‘Tteokbokki Gangjeong’ that kids will surely adore! Enjoy!
