Easy Homemade Mini Whole Potato Pizzas for Kids’ Snacks
Received a box of potatoes from the countryside and I’ve been finding so many ways to enjoy them! Among them, here’s a simple yet incredibly delicious snack recipe perfect for kids. These mini pizzas feature a crispy potato crust topped with savory tomato sauce and gooey melted cheese, making them a guaranteed hit!
Essential Ingredients- 2 boiled potatoes (small size or egg-sized)
- Cornstarch (for dough and coating)
- Vegetable oil (for frying)
Cooking Instructions
Step 1
First, prepare the potatoes that will form the delicious base of your mini pizzas. Select two potatoes that are not too large, about the size that fits comfortably in your hand or an egg. Wash them thoroughly, even if you plan to peel them, and place them in a pot filled with ample water. Boil until they are completely tender when pierced with a fork.
Step 2
While the potatoes are boiling, spread a generous, even layer of cornstarch onto a large tray or plate. This step prevents the potato dough from sticking later and also helps achieve a pleasant chewy texture.
Step 3
Once the potatoes are cooked, peel them while they are still warm. Place the peeled potatoes onto the tray dusted with cornstarch. Now, use a rolling pin or the bottom of a glass to press down firmly on the potatoes, flattening them into a dough-like shape. Be careful not to press them too thin, as they might crumble. Aim for a thickness of about 1 cm. You can shape them into ovals or circles, whichever you prefer.
Step 4
Voila! You now have a warm and sturdy potato dough ready to be transformed into delicious mini pizzas.
Step 5
Next, take a sieve and lightly dust the flattened potato dough with more cornstarch. This coating will help create an extra crispy crust when fried and will also ensure the toppings adhere well. Make sure the entire surface of the dough is evenly coated.
Step 6
Heat a frying pan over medium heat and add a good amount of vegetable oil. Carefully place the cornstarch-coated potato dough into the hot oil. Fry until the bottom side is golden brown and crispy. Allow it to cook sufficiently to achieve a nice crisp.
Step 7
Once the bottom side of the potato dough is nicely crisped, use a spatula to carefully flip it over. Cook the other side until it is also golden brown. Maintain medium heat during this process.
Step 8
After flipping, it’s time to add the pizza toppings. Reduce the heat to low. Spread about 2 tablespoons of tomato sauce evenly over the cooked side of the potato dough. Make sure to spread it all the way to the edges for maximum flavor.
Step 9
Now, generously sprinkle your desired amount of pizza cheese over the tomato sauce. Kids absolutely love the stretchy, melted cheese! Cover the entire surface without any gaps.
Step 10
Finally, cover the pan with a lid and cook over low heat until the cheese is completely melted and the pizza is heated through, which should take about 3-5 minutes. Once the cheese is beautifully melted, turn off the heat. Carefully transfer the finished mini whole potato pizza to a plate. Finish with a light sprinkle of dried parsley for a touch of color and aroma. Enjoy your delicious homemade mini whole potato pizzas, perfect for sharing with your little ones!
