How to Make Easy and Delicious Keto Gimbap
Keto gimbap is a popular choice for those following a low-carb, high-fat diet for weight management and health! It might seem complicated, but I’ll show you a super easy and quick way to make it at home. Enjoy a healthy and satisfying meal with this delicious keto gimbap, packed with fresh vegetables and eggs instead of rice.
Keto Gimbap Ingredients- 4 fresh eggs
- 1 generous handful of thinly sliced cabbage (approx. 100g)
- 1/4 carrot
- 100g spinach
- 2 sheets of seaweed (gim/nori for gimbap)
- Pinch of salt
- A dash of sesame oil
- A little cooking oil (or olive oil)
Cooking Instructions
Step 1
First, crack 4 eggs into a bowl. Add 1 teaspoon of salt and whisk them well until smooth. For an even more tender omelet, you can strain the egg mixture through a sieve.
Step 2
Thinly slice the cabbage. Cutting it very thinly is key for a good texture and easy rolling. Using a mandoline slicer can make this process much faster and easier.
Step 3
Add about one generous handful of the thinly sliced cabbage to the whisked eggs and mix thoroughly. Let it sit for a moment to allow the cabbage to absorb some of the egg mixture.
Step 4
Lightly grease a non-stick pan with a little cooking oil and set over medium-low heat. Pour in the cabbage-egg mixture and cook until golden brown. Be careful not to cook on high heat, as it might burn. Flip the omelet to cook evenly on both sides.
Step 5
Wash and thinly julienne the carrot. Lightly sauté the carrot strips in a pan with a little oil until they become tender and vibrant in color. Season with a pinch of salt and let it cool slightly.
Step 6
Wash the spinach and blanch it in boiling water for about 30 seconds, just until wilted. Avoid overcooking, as it can become mushy. Immediately rinse the blanched spinach under cold water and squeeze out all excess moisture. Season with 1 teaspoon of salt and a dash of sesame oil, then gently mix by hand.
Step 7
Now it’s time to roll your delicious keto gimbap! Place two sheets of seaweed (gim/nori) slightly overlapping or side-by-side on a clean surface or a bamboo rolling mat. Spread the cooked cabbage omelet thinly over the seaweed, leaving a small border at the edges to prevent the filling from escaping.
Step 8
Arrange the sautéed carrots and seasoned spinach evenly over the cabbage omelet. Now, carefully start rolling the gimbap. Since the egg omelet is moist, it might feel a bit tricky to roll at first. Use a bamboo mat or your hands to gently press and shape the roll as you tighten it. Roll it up firmly, and then slice into bite-sized pieces. Your delicious and healthy keto gimbap is ready!
