As part of my ‘fridge clean-out’ project using ingredients on hand, I decided to make a simple yet impressive pork neck steak. It’s incredibly tender and bursting with flavor, even without any special techniques. I had some thawed pork neck that needed to be used quickly, so I transformed it into this steak, and it was a huge hit! It’s a guilt-free, delicious meal made from leftover ingredients I had planned for a spicy pork stir-fry. Enjoy a restaurant-quality dish right at home.
Main Ingredients- Pork neck 400g
- 1/2 Onion
- 1 King oyster mushroom
- A little celery
- A handful of bean sprouts
- 3 Cherry tomatoes
Seasoning & Sauce- Generous amount of olive oil

- 1 Tbsp Worcestershire sauce
- 1/2 cup Dashi broth (or water)

Cooking Instructions
Step 1
Let’s start making a delicious pork neck steak easily at home using your air fryer! You can create a fantastic steak without any complicated steps.
Step 2
Gently pat the pork neck dry with paper towels. Then, score the meat by making shallow cuts across the surface. These cuts help tenderize the meat and allow the seasoning to penetrate better. Brush generously with olive oil, then season well with salt and pepper. Let it sit for a while to allow the flavors to meld.
Step 3
While the steak is cooking, prepare the accompanying vegetables. Remove the stems from the cherry tomatoes and cut them in half. Peel and thinly slice the onion. Lightly rinse the king oyster mushroom under running water, pat it completely dry, and then slice it into 0.5cm thick pieces. Wash and drain the celery and bean sprouts.
Step 4
Place the seasoned pork neck in the air fryer basket. Cook at 220°C (425°F) for 20 minutes. Lining the basket with parchment paper will make cleanup much easier.
Step 5
After 20 minutes, flip the pork neck and continue cooking for another 20 minutes. During the last 5 minutes of cooking, add the sliced king oyster mushroom and halved cherry tomatoes around the steak. This allows the natural sweetness and flavor of the vegetables to infuse into the dish.
Step 6
While the steak is cooking, prepare the sauce. Lightly heat some olive oil in a pan over medium-low heat. Add the sliced onions and sauté slowly until they turn golden brown, bringing out their natural sweetness. Once the onions are nicely browned, pour in 1/2 cup of dashi broth (or water) and bring to a simmer.
Step 7
Once the broth is simmering, stir in 1 tablespoon of oyster sauce and 1 tablespoon of Worcestershire sauce. For an extra boost of flavor, you can add 1 teaspoon of minced garlic. Let the sauce simmer for a bit longer to allow the ingredients to meld together.
Step 8
Continue simmering the sauce until it thickens and becomes slightly syrupy. Arrange the cooked steak, roasted mushrooms, and tomatoes attractively on a serving plate. Add a side of fresh salad and bean sprouts for color and texture.
Step 9
Generously spoon the prepared onion sauce over the cooked steak. Drizzle some sauce over the entire portion.
