During this season, it’s common to buy a box of tangerines, right?! So today, I made chewy fruit mochi using tangerines! The combination of the soft, chewy mochi and the juice-bursting tangerines is divine! It’s also a fantastic snack for kids! Let’s all make it together!!

Ingredients

  • 150g glutinous rice flour
  • 50g sugar
  • 180ml water
  • 240g red bean paste (or white bean paste)
  • 8 small tangerines
  • 1/2 cup starch powder (corn starch recommended)

First, prepare all the ingredients to make delicious tangerine mochi. Wash the tangerines thoroughly.

Peel the fresh tangerines completely. Lightly pat them dry if they are too wet.

Divide the sweet red bean paste into 8 equal portions, about 30g each, to match the number of tangerines. Roll them into balls.

Carefully wrap each tangerine with one portion of the red bean paste, ensuring it’s completely covered without any gaps.

Once each tangerine is fully encased in red bean paste, wrap them individually with plastic wrap and refrigerate for a short while. This helps the mochi maintain its shape during preparation.

In a large bowl, combine the glutinous rice flour, sugar, and water. Mix well until there are no lumps. Cover the bowl with plastic wrap and microwave in 1 minute 30 second intervals, repeating 4 times (for a total of about 6 minutes), stirring with a spatula between intervals. Check the mochi’s consistency as it cooks.

After the first 1 minute 30 second microwaving, take the bowl out. Use a spatula to knead and mix the mochi dough thoroughly. This develops its chewy texture. Re-cover with plastic wrap and microwave for another 1 minute 30 seconds.

After the second microwaving, repeat the process: remove from the microwave, knead and mix vigorously with the spatula. This step is crucial for achieving the desired chewy texture. Once mixed, re-cover and microwave for another 1 minute 30 seconds.

Perform the third microwaving step identically to the previous ones. Take it out, knead and mix well with the spatula, then cover and microwave for a final 1 minute 30 seconds.

This is the final cooking stage. Remove the mochi dough from the microwave and knead it thoroughly with the spatula. Ensure all parts of the dough are evenly cooked and mixed for a consistent texture.

After the dough is cooked, to further enhance its chewy texture, use a rolling pin to knead and shape the dough for about 2 minutes while it cools. This process makes the mochi softer and chewier. Generously sprinkle starch powder on your work surface.

Sprinkle corn starch (or potato starch) evenly over the flattened mochi dough. Using corn starch generally results in a cleaner finish. This prevents sticking and makes shaping easier.

Divide the mochi dough into 8 equal portions. Lightly dusting your hands with starch powder will help prevent sticking when dividing the dough.

Take a tangerine wrapped in red bean paste from the refrigerator and place it on top of one portion of the mochi dough. Enclose the tangerine completely with the mochi dough.

Gently shape the mochi-covered tangerine into a smooth, round ball using your hands. Roll it carefully to form a neat mochi shape.
