Main Ingredients- 1 cup frozen shrimp (thawed and patted dry)
- 1/4 onion (thinly sliced)
- 1/2 green onion (chopped)
- 2 eggs
- 2 servings warm cooked rice

Cooking Instructions
Step 1
First, prepare your vegetables. Finely chop the green onion into rounds and thinly slice the onion. Having your ingredients prepped beforehand will make the cooking process much smoother.

Next, let’s make the soft scrambled eggs. Crack the two eggs into a bowl and whisk them well. You don’t need to add salt at this stage. Lightly oil a heated pan, pour in the whisked eggs, and stir gently with chopsticks or a spatula as they cook to create fluffy scrambled eggs. Avoid overcooking to maintain a tender texture.

Now it’s time to stir-fry the shrimp and vegetables. Add a little cooking oil to a preheated pan, and add the sliced onions. Stir-fry over medium heat until the onions become translucent. It’s important to sauté the onions thoroughly to bring out their natural sweetness.
